My general rule for Soy sauce vs fish sauce… Rice dish like fried rice or stir fries: Soy sauce safe 😆 Soup dishes like pho and bun Bo hue for example: fish sauce. Cos most of Vietnamese food is widely marinated with fish sauce the umami profile is different to that of the more earthy soy. Chinese originated dish like dumplings and chicken rice is more soy centric

You guys are the funniest and laid back couple I ever seen on travelling youtube, (U to be, in vietnamese accent ,)))) a lot of thing is "lost in translation" and the result is more funny in my view. I was born in Hà Nội more than a half century ago, and I left VN before 1975. In this video I heard but I cannot understand about what they are talking/chatting by those "soit disant/namely" hanoïen customers on the background, the tone/accents are so terrific/out of my mind. By the way a young friend of the sister of my best friend in Paris is German, and I chat with him in vietnamese with a HaNoi accent because he learn it over there in the last century, and he already eat dog meat, and I don't never ever, so he uber alles a lot of beer when he came to Paris to finish his phD. Ha Ha Ha. Delicacies and the foods now are not as authentic as they used to be back then. Take care et BONNES VACANCES. I love you guys!

If you expect to have nice noodles( pho, bun bo hue..) I suggest that you should go to a restaurant with a big pot of meat soup, because they usually cook with bone, soup is very sweet, it’s different with Monosodium glutamate or something like that
