Hi again DanAnna, it is fun to try and figure out what items in the dish that you are eating because not every region uses the the same ingredients in our traditional dishes. I think the soft fluffy transparent thing that Anna wondered was pork rind that has been simmered in the broth.

By the way, if the shrimp skin is soft enough you can even eat it. Vietnamese love it for calcium, good for the our bones and skeletons. This dish is originated from Chinese immigrants (the Cantonese).

Yes and we like the way to respect the whole animal/product, you eat everything on it not just the fin part as filet.
