I buy IQF salmon and tuna for my sushi at home. Flash frozen fish thawed under normal conditions makes decent sushi at home. I always use plain rice vinegar for rice so I can control sodium levels. I love watching this videos. Chef Terada is great!

Like his name kind of sounds like, Hiro is the Hero of sushi making, I like seeing him happy and excited shopping, explaining the stuff and getting his new knife. It makes me happy seeing him happy too :) The camera man is also such a nice person, I enjoy seeing the friendship you both have in all your videos, it gives a diferent and unique feel ! If I ever travel to the United States, I will surely consider visiting the restaurant to meet you guys and have a great time :)

Thank you for making this series, I love sushi but it is prohibitively expensive, however I have made it at home before and found that it is not that hard. I strongly suggest anyone that it interested give this a shot. Bare in mind that you don't have to use fish at all, you can get imitation crab meat fairly cheap and make pretty good rolls that way. It really is the rice and the nori that make it delicious, everything in the sushi roll is just a bonus! (sushi in Japanese means vinegared rice, so the rice really is the most important ingredient!)

do you guys buy the fish there? where can regular people buy sushi grade tuna and salmon without going through a distributor? I only ask because you guys probably go through a distributor to get really fresh fish, any recommendations as far as regular big box stores, Sam's club, Costco, Bj's, etc, etc, even Publix, I want to make it at home, and I don't want me or anyone on my family to get sick. I love all your videos, and I am really looking forward for an answer to my questions. keep up the great work.

dont buy fish to use for sushi. Go to a local place that sells sushi grade fish. One problem though is that sushi fish needs to be cut against the grain, but in the US they sell you tuna in "steak" form so its really hard to cut the fish the right way. In Japan fish for sushi comes in long rectangular block shapes so its much easier.

What is a good guideline when buying for home and for kitchen ? I see usually sticking to brand names like japanese vinegar and rice, although grown in California rice is different to grown in Japan rice despite being the same grain. Thanks.

A fine dinning chef from Japan whom I was under, mixed california Homai and japan Homai about 50% each, so not too sticky but sticky enough. When I used 100% japan, the feel of making nigiri completely changed, very sticky and smaller grain, had to work fast before rice stuck to hand. Warm rice and cold neta.*****

thanks! Rice is expensive..we used real wasabi but there are many types of wasabi and expensive. Maguro ironically is from Indonesia, flown up to Japan, then back down to SE Asia.*****
