I've been watching you guys for so long, i've been making sushi at home for the past year or so and i've learnt alot from you guys. You're a big help, i'm on to mass producing eel sauce/ spicy mayo/ and siracha all in containers because people want me to always make them sushi! I make it acouple times every week and I reference your videos every so often. Love them and thanks for this home series for beginners looking to learn!

I have been looking for sushi videos similar to this series when I stumbled upon this channel. The sushi work is incredible and the chef is a master of his craft. I look forward to trying this sushi roll soon and visiting the restaurant to try the chefs craft first hand some day

Great video you should do one where you and Chef Hiro Terada go to a big BBQ restaurant and after done eating chef hiro can give his insight on how the food is and how it relates to the food culture he works with like I think it would be a really cool video to see :)

Black sesame and white sesame. There is no colorant, that is their natural color. The white sesame seeds can be toasted until they are a light brown.

Smoked fish in homemade sushi... I gotta admit, that shit right there is pretty clever. I never really understood the special treatment sushi fish gets/needs, though. If the raw fish is being sold for consumption, doesn't that imply it's safe to eat? What exactly is the difference between, for example, sushi-grade raw salmon and 'regular' raw salmon?

Question: What type of plastic wrap does he used on his bamboo mat? I notice in a lot of your videos. Chef Hiroyuki uses a bamboo mat wrap with plastic. Does he put a plastic wrap on himself?

rezboy90 I assumed it was just ordinary cling film to make it easier to keep clean and hygienic (i.e. dispose of the film after use rather than having to boil / bleach the mat each time).

you must remember that the knife Hiroyuki uses is very sharp. that would be the cause of your problem.

+David G Sushi isn't just raw fish, even traditional sushi uses some smoked fish. Salmon is used in sushi here in the western world, so it is only natural for smoked salmon to fit in.

Madra raw salmon and smoked are completely different, i can't see smoked salmon in sushi, it might be normal but i just dont think i'd like it. I like smoked salmon in general though.

David G I can understand that, but I personally think it is worth a try if you do like smoked salmon. You might be surprised. I personally like smoked fish in sushi, but obviously everyone likes something different because I think salmon roe is worthless as anything other than bait, yet thousands of restaurants serve it.

in the first video, you looked at a bunch of things and didn't tell or show nothing about what you bought.. Now in this video you just put things together and roll them again without no explanation.. what exactly did you buy and what did you put together?? what was that white creamy thing? which one did you buy? rice fish the seaweed ok what kind of sesame mix was that you put in?? Least informative video ever.
