chicken fried steak
about 2 pounds tenderized sirloin or cube steak
2 cup flour
1 sleeve saltine crackers crushed
1/2 t. Salt
1/2 t. Pepper
1 t. garlic powder
1/2 t. onion powder
1 t. dried parsley
1 t. smoked paprika opt.
1 inch oil
325 degrees 3 to 4 minutes on each side

A little different than I was taught, but it still looks so good! I learned to make chicken fried steak from my granny...she soaked the steak in buttermilk, then dredged in self rising flour. She let it set for a few minutes, then dredged it in flour again, then fried it. That buttermilk and the double coating of flour make such a wonderful crust! Gravy made just the way you did. Mashed taters, pinto beans, cornbread AND biscuits...that's how she served it. In the summer, there would be a big plate of sliced garden fresh tomatoes, and a glass of green onions. I sure do miss those days, 50+ years ago.

Oh yes...Chicken fried steak, gravey and boiled potatoes with sliced tomatoes and a glass of green onions on the side......Grandma gave us each our own little plate to put salt on to dip our onions in. A slice of bread and butter and we were all set :)

Gosh, this Texas girl is in need of a good Chicken Fried Steak now. In my younger days, it was sort of a "mission" for me to taste test the CFS in every restaurant and every state. I'm up to 35 states and no one makes it like the Texas cooks do.

@@shelleyriley9130 have you been to Babe’s? I’ve never tried their chicken fried steak, but it does look good, I always order the fried chicken because it’s as good cold as it is hot, and they’re sides are really good, but I do make better mashed potatoes and gravy. I seldom even eat the chicken in the restaurant, I eat the sides and bring my chicken home thinking about how good it’s going to be tomorrow. Babe’s is a fun restaurant. Only problem is that way too many people enjoyed it and couldn’t wait to tell everyone they knew who then tried it and told everyone they knew and now the lines are too long. Please do not tell any friends or family about this place……should I consider the fact that I may have told you, but put it in the form of a question so I’m not sure that counts! 😂

My mom made the best fried chicken..and that's how she made her gravy. It was so good. If only I could enjoy a chicken dinner with her again... Have a wonderful Easter.

That chicken fried steak dinner was one of my TN Daddy's favorite meals! Made me smile, recalling how my Momma taught me how to make that receipt!...I am allergic to eggs, so I dip my meat in whole milk with a little melted butter and add salt and pepper and spices into the crushed gluten free saltines. Have to dip and dredge it twice to make it work out, but it tastes just like egg version.

I’m with you, can’t get enough gravy. I love chicken fried steak. It’s so good. Got to have the gravy with it. I’ve never tried it with rice. I definitely like frying with cracker crumbs. We make fried pork tenderloin sandwiches. Just pound your tenderloin out thin, dip it in flour, egg and then the cracker crumbs. Great on a bun with a big slice of onion and any condiment you like.

Oh my goodness. My wife made CFS tonight and wow. She was quote-- ah best Ive ever made. Now I know how to make them. Thanks so much. We did pair with mashed potatoes and your gravy. And some creamed wild onions and peas. And some homemade toasted oat bread!! Wow. We watch your videos together on the weekends. We just turned 50 and 53 and you 2 are our inspiration as we navigate life. We hope to get more and more sustainable as we transition in age and knowledge. Thanks so much for your videos and faith.

Are you from Texas Ruthie? I was wondering because I am from Texas and I have never seen it made without saltine crackers crushed for the final dredge. Where I grew up, in the Dallas area and Houston area, if cracker crumbs were not used, then it was called Country Fried Steak. That was the difference between the two for us.

I’m a lifelong Texan and grew up about an hour east of where you lived. Chicken fried steak with rice and brown gravy is such a part of our culture and at our house it was on the table once a week…my mom could cook it beautifully. However…she never used cracker crumbs and neither have I but boy is that a great idea! That’s what probably makes it look and taste like restaurant cfs. I was surprised to learn later in life that not everyone one eats rice with brown gravy. Maybe it just depends on where you live. For anyone who hasn’t had rice and gravy, you’re missing out! And…much easier to prepare than mashed potatoes. You knocked another one out of the park Miss Lori…and I really appreciate the information about what cuts of meat to use and how important it is to make it thin.

I was born in Texas and live in Arkansas now. My mom made this when I was a kid but she called it cracker steak. Love it still today.

This brings back a lot of memories. My mom was not a cook! but she had a few dishes and this was one of them. I remember standing by the stove and watching her pour a little of her coffee into the gravy to make it a darker color. She used top round steak that was pounded to death and lots of pepper in the gravy. Thanks for the memories and happy Easter

Next to a cheeseburger, this is my favorite thing to eat...EVER! CFS was my fathers special meal...he would make homemade french fries and huge beautiful salad for us...DELICIOUS!!

Mmmmm! Chicken fried steak and skillet gravy! I live in Texas and it made me smile. You are right. Texas makes some of the best. Wish I had some now! Prayed for y'all in all of the crazy storms that have come through in the last days. Several days ago a tornado and baseball sized hail came through a small town near Waco where our son and his family lives. There was a lot of damage around them from the tornado but praise God all they got was hail. Thought of those in it's path. So thankful to see y'all are ok. God bless you both! My Mom was from Alabama, and we had gravy with EVERYTHING. When she taught me to make gravy she would say, "You're going to make gravy using the drippings from cooking the meat and leave the goodie from the meat in the skillet. The goodie give the gravy the meat flavor." I was quick to learn how to make gravy from frying meats. I still love gravy on everything and especially love my sausage gravy, no hunting around for the sausage in my gravy and my gravy really tastes like sausage. I don't know about you, but I save the juice from when I bake hams, pork, chicken, beef, or turkey. I pour the juice into an ice cube tray that I use only for broths. When the juice is frozen, I remove them from the tray, put them in ziplock bags, and put them back in the freezer. I really love adding the cubes of ham juice to my beans when I cook them. And, I freeze individual serving packages of the beans for myself. I don't like washing dishes so when I cook, I make enough for several meals and freeze them in individual single serving packages. I just don't freeze any fried foods. LOL! Yes, I have gotten very lazy in my old age. Thank you for sharing your recipe for Chicken Fried Steak!!! It is at the top of my favorite meal list.
