I don't have Parmesan (except the green can - which my mother loves) and our grocery stores or out of most cheeses. Would grating up white cheddar into the batter effect the consistency?

Thanks Chef for this great recipe. I used two small zucchini instead, as asparagus was out of season. I also added some minced shallot and garlic about 45 seconds after I added the veggies into the hot bacon and oil. The result was incredibly delicious. Served it up with a simple salad and a bottle of white wine.

Lazy Sunday night, did not feel like cooking much nor shopping and then I saw this recipe & couldn't believe it - I had all the ingredients at home. Once again, a lovely dish, Chef! I was drawn to your comment about its versatility and the possibilities for a variety of ingredients. Of course, it begins with eggs, a hen's way of saying thank you to her keeper for food, water, range to roam and shelter from predators and inclement weather. It brings to mind the classic quiche, the Spanish tortilla and the simple omelet All wonders in their own right, but with bacon as a perfect partner.

Dear Chef John, I just made this but did not have any Parm in the house. I added in some finely diced shallots and a couple chopped mushrooms and jalapenos. I made a 2x batch in my largest cast iron and it is absolutely delicious. You could say my double dutch was a real slam dunk.

I just made this with onion, mushrooms, and ham. Turned out really good. Didn’t have lemon zest so I used a few drops of lemon essential oil and the lemon added a wonderful flavour!!

I have made a fritatta like that with asparagus, I have made dutch pancakes before, but never thought of putting the two together. Oh funny story: When I was I teenager, my parents took me to the Netherlands to visit my mother's relatives. We went to this pancake house that has been in Amsterdam for many years. The owner had a parrot in a cage and the parrot was talking up a storm in Dutch of course. I couldn't understand what the parrot was going on about, but my mother was trying to hold back her laughter as the pancake house owner put a blanket over the parrots cage. Apparently the parrot used to be owned by a sailor and the bird was swearing at everybody in Dutch. LOL.

Hi. I made this, this morning. It came out good. I had "small" farm eggs and decided to use 4 eggs. This made my Dutch Baby more custardy and dense. Still a very tasty dish. I will cut back on the bacon by one strip next time, as I tasted very little of the asparagus because of it.

I make these as sunday brunch all the time, its a fantastic recipes, I tried Ham and Asparagus but never Bacon and Asparagus, will surely give this a try! Also i usually dont add cheese to the batter, I usually grate it over the top when it goes into the oven, but I'm surely gonna try to add it to the batter next time! thanks for the great recipe!

So it is done. Although we had no cayenne home and I made it with whole flour, it was fantastic. Full of taste and texture. Even our old and decently aged gas oven in combination with a silicon form (only round thing we have) can't ruined it, it's just took a bit longer. A very nice meal indeed.

We have a dish here in Sweden that is very similar to this, it's called Ugnspannkaka, or directly translated "Oven Pancake". The basic version of which is a batter that's very similar to pancake batter combined with crispy bacon all poured into an oven pan and done in the oven. This is usually eaten with Lingonberry Jam.

I think they are available in all of scandinavia, but they are very common in Sweden, as we eat lingonberry jam with alot of our classical dishes (meatballs, "oven pancake", black pudding etc..). They might be an aquired taste but if you are able to find some, try it out :). Meatballs (pan fried in butter), potatoes, gravy (on the side side if you want it authentic) and lingonberry jam. :) (Chef John did Swedish Meatballs in a very italian way, as we always pan fry ours in butter and have the gravy on the side.)

Your Sweidsh Ugnspannkaka is the same as our Finnish Pannakaku which means "oven pancake" and is eaten with Lingonberry preserves. Cool to know.

I made this for my little brother in the 8th grade and he was a baby then so now a few years later he always asks me to "cook him some babies" xD The look on the faces at the grocery store when he asks me to cook babies in public is hilarious.

I think it got it's name from the old day's when this was cooked in a Dutch oven on the coals. It's a little like Yorkshire pudding mix in it's taste. Yummy.

I you like this, you would love the Thai style, crispy ommelette. It's a silimilar idea-ommelette loaded with stuff (I prefer onion, basil, and fresh chilli), and deep fried to fluffy, crispy cloud. It's pretty greasy though, so you have to let it drain a bit before eating.

During our virus isolation...used this recipe to make a treat for ourselves. We used turkey bacon and needed to add olive oil, though I should have added a bit more. While making the batter, I realized I had tossed out my AP flour so had to improvise with spelt flour. As a consequence, did not rise like the one pictured. It was still tasty. I was thinking about this last night and decided to add hollandaise sauce as a topper. It was very delish. Would there be any other flour instead of AP that would give a nice rise as well? Thanks for this little spark of joy in our dreary virus ridden world.

Darn it, Chef John, that looks mighty fantastic! Only one challenge though.... May I toss the challenge to you? Veganize it! ☺️👏🙌👍🌱💚✅😘... LOL! Well, I make a striped bakun which I just LOVE, from the Gentle Chef, his book Seitan and Beyond (sometimes I make it as "English Filet Bakun, then I just mix the wet ingredients for the red part and white stripe and the dry ingredients, then make one large red piece of bakun). No matter how I make it, it is delicious. I cut it in slices as I like it, then freeze with plastic between layers, so it is easy to pull a few slices out of the freezer. The great thing about plant- or "green meats" is that they in general can be tossed right from the freezer and into the pan. So practical! I add a tiny little amount of maple syrup to my bakun at the very end, makes the caramelization and balances the flavors perfect! I bet you could even roll bakun around aspargus... YUM! Google for the bakun recipe, you'll find it on his website! For the batter part of this, I guess one would have to experiment with a chickpea omelette/pancake recipe, to which I would add a flax seed egg or two, because I find that that and oil gives a texture/elasticity more like proper eggs than chickpea flour alone does. I would also have added some kala namak/black salt for egg flavor. Maybe one should add some corn starch or similar to make sure it will stiffen up nicely, even if it is thicker than ordinary pancakes/crepes. Great time for this right now, never seen aspargus this cheap ever here (it is usually quite pricey)! Thanks a lot, Chef John! ☺️👏👍❣️

hes not joking about the "mixed with sawdust" bit. check the list of ingredients on american made shredded cheeses. most have cellulose as an ingredient. thats a fancy word for wood.

I'm sure most people here know that shredded cheese bought in supermarkets sucks if you're going for something cool. Even without the "saw dust", it's still made with the worst part of the cheese anyway.
