You're welcome Jase. More common than the baked version was the steamed version, which involved wrapping the roly poly tightly in a muslin cloth or tea towel. It was then steamed for at least 90 minutes and often for over two hours. The result is lighter and lacks the hard crust of the baked version. Many would argue that it tastes better too. I enjoy both equally. Thanks for your interest. I really enjoy reading anecdotes like yours. Some traditions are worth saving!

A very fine example of a stick to your ribs, hearty, tasty and super easy meal. You cannot go wrong with that, in my opinion meals like this should feature on any dinner table and be considered topnotch fare. My trouble is I cannot get good suet here, so may need to source some elsewhere. Great job again, lots of love xxxx

Thank you Emma. You have to be careful because there is a lot of false suet made from tallow on the market, and it doesn't taste half as good. I'm surprised Atora is not available to you locally, but it may be available online. Otherwise you may have to tap up an artisan butcher! Big loves xxxxxx

If you cannot get suet, then put some lard or dripping in the freezer and just grate the amount you need, using the large gratey bit, into the flour. It turns out the same. In fact beef dripping in this recipe is amazing.

Thank you so much for making this video !!! I was going through our kitchen cupboards two days ago when I found my grandmas bacon and onion roly poly recipe !! I’m born and raised here in America (unfortunately) with my dad who’s from the Hampton area, so I’m very familiar with the UK as we come visit family every year. Seeing as the world is in shambles, you can imagine it’s been a very long time since we’ve visited our second home, and it’s safe to say my father is beyond homesick. I’m lucky I found that recipe when I did, my moms birthday was yesterday and I’m going to surprise them and cook my grandmas famous roly poly and a shepherds pie so hopefully they feel at home again. The recipe I found was a little unclear though, which is why I’m here ! My grandmas roly poly was for special occasions only and I wasn’t aware it made other people’s childhoods too. When my dad worked nights at the royal mail he'd bring home this but it was cold and he called it a half and half. One side had bacon, onion, gravy /sauce and other things and the other side was a sweet jam. He'd have the savoury part and give me the sweet. It wasn't really half mind, more like 30% sweet, although it was longer. You could tell each side by the lines scored upon the pastry, horizontal was savory.

No, thank you for the great clip and a very clear recipe. I don't cook much but I think I can make this. I had a quick read and clanger means stodgy or dense, that was in reference to the pastry. It wasn't l originally baked. Rather wrapped in cloth and steamed maybe boiled, like a dumpling. It was usually made as lunch for men working the land. The pastry was there just to protect the filing. The men also had dirty hands so I guess you don't want manure as a flavoring. I made this last week, and it was lovely! I made it in my Instant Pot (pressure cook for 40 minutes) It is good to freeze in portions too, which stops me devouring the whole thing at once!

Hehe Sonny, it's an old English name for a whole series of sweet and savoury suet puddings which have diminished in popularity over the last 30 years. A common filling was simply strawberry jam. Good old fashioned comfort food!

I love the name "roly-poly pudding" !! Never heared of clangers before, so I googled it because I always want to learn ! Nice anecdote I found : "Historically, the clanger was made by women for their husbands to take to their agricultural work as a midday meal: it has been suggested that the crust was not originally intended for consumption but to protect the fillings from the soiled hands of the workers". I also read they used sage to spice it ! Is that common ? Suet... we call it "reuzel" or "smout" ;-)

I really like sage, particularly with pork, but its use in suet puddings like this is a regional variation. Pork, apple and sage make a wonderful filling! Suet is the raw, hard fat of beef or mutton found around the loins and kidneys. It is not to be confused with lard or tallow, which has been rendered and therefore sterilised by heat. The Atora brand suet we use in the UK has been rendered safe for storage to improve its shelf life, and formed into small pellets for convenience of use. Roly poly is a great name 😆

I would stew the chuck steak until it was tender and add sauteed lamb's kidneys. You could use the steak juices to make a tasty gravy. It's possible but it would take a while.

In Oxfordshire we tend to wrap in muslin cloth and boil And lard is used rather than suet. Sounds heart attack inducing but it was typically eaten by farm labourers who would burn off the fat

Our parents and grandparents lived through rationing during the wars and they ate fare like this every day. We have been brainwashed by the TV to think what we are doing now is healthy.
