Just made this yesterday. I switched the flour to 2 cups of oat flour (which I blended from oat flakes) (I didn’t have whole wheat flour) and a half cup of coconut flour. I used a little walnuts and pistachio nuts. It was so good. Thanks for sharing.

dont need to wet it even. just screw it up in a tight ball. then unwrap it. goes into the cake tin & stays in place.

This is truly fantastic and is not plagued by the "rubbery" crust common to most oil-free baked goods. My slight alteration: I substituted 2 medjool dates for the maple syrup. It provides the same level of sweetness with added fiber. I've made versions with raisins/walnuts, apricots/pecans and cranberry/orange peel. I also made your wonderful silken tofu mousse/frosting and flavored it with cranberries and orange peel and used it as a spread for the bread. Simply wonderful. Thanks for another great recipe.

Lol, you ladies are a treat to watch! Love you both! It's four years later (2023), and I made the PB Woman Warrior book version. OMG! So very good! I made it with raisins, and since I had some pecans to use up, I finely chopped a small amount (I do that to use fewer nuts, but the pecan flavor is more distributed). I plan to have this for breakfasts this week. Thank you!!

Hello, I just made this recipe and it turned out great despite the fact that I did not have whole wheat flour I used instead 1 cup instead oats and 1cup cassava flour. Next, I did not have 3 medium spotted banans so I used 2 banana and 1 cup steamed pumpkin and no applesauce so I chopped up an apple. I also do not use sugar or maple syrup so I used 11 deglat dates and had to add more water. I believe that cooking involves a lot of improvising. Thanks again for another delicious recipe.

FYI It’s delicious without the maple syrup, too, if anybody’s wanting to keep sugars lower! I add in ground flax and ground hemp hearts to make it a little more filling & get in my omega 3s, too!

So I went ahead and made this today. I used 4 bananas and no maple syrup. It's definitely sweet enough. I used all oat flour. I added butter flavoring and substituted 1 t pumpkin pie spice for the nutmeg and lemon juice for the apple cider vinegar. So it wouldn't be too gooey, I added 2T flax seed meal. My add-in was dried currents; they are tiny and you get a bit in every bite. Well, ladies, I haven't had sweet bread or anything cakey for years. These were worth waiting for. Thank you for all you do.

I put ripe bananas in the freezer until I have enough to bake bread with. Peel or not your choice. I sometimes thaw them out and put them in hot oatmeal and they blend right in to sweeten it up.

I also place them in the freezer when they are way too ripened, but definitely without the peel because it's super hard to peel a frozen banana. :)
