I so appreciate the time and effort you put into every single one of your videos. More than that, I appreciate the info you provide and how I learn something about vegan cooking and cooking in general in every single one and I am 69 and have been cooking for longer than you've been alive so that's something! You have become my Sunday school...

Omg wow this comment warmed my heart, thank you so much! I really try to share tips that are helpful by explaining why and how, not just "do this" or "add that" with no explanation. I think understanding why and how things work in the kitchen has given me so much more confidence as a home cook and I enjoy the process so much more because of it. I hope my videos will help others to feel the same way. I really love teaching and sharing what I've learned so it's so nice to know that it's been helpful for you. Thank you so much for taking the time to leave me such a nice comment, you've made my day 😊❤️ Hope you're having a nice evening!

@@NikkiVegan they always seem to come out really dense, it's either the recipe or the chef 🤪
@NikkiVegan2 жыл бұрын
@@jenniferomahony577 haha yeah it could be the recipe ratios...without knowing the exact recipe I would say that fluffing up the flour and spooning it into the measuring cups is kind of game changer because scooping it directly out of the container presses it down and makes it more dense (aka too much flour which means dense bread) Also mixing the wet ingredients well and ensuring your leaveners are fresh/not expired can go a long way too. Hope that helps!

@NikkiVegan2 жыл бұрын
I use specifically use "refined" coconut oil instead of "virgin" so that it doesn't add any coconut flavor to what I'm baking. It's a huge game changer so highly recommend that but also organic canola oil should work well too! Hope you enjoy this banana bread recipe 😊❤️

Does anyone else love the end pieces as much as I do? Whenever I make banana bread, I bake two loaves at the time and cut off all four end pieces to save for myself. I love to put chopped pecans and even a bit of espresso power in mine.
@NikkiVegan2 жыл бұрын
Ooo pecans and espresso sounds so good! I’ve gotta try that! And I personally love the middle piece because it’s always so soft but I can see why you like the ends! Those edges are so flavorful! Are you the same with brownies?

@@NikkiVegan Brownies are literally my favorite food ever, so I take as many corners, centers, and sides as I can get! A fun fact about banana bread is if you double any recipe (+ add about 10 min. cook time) you can make banana bread BUNDT CAKE! Eat it naked or top with any glaze you like (salted caramel pairs really well).

Can’t wait to try this. Out of bananas right now. May try it as cupcakes, know the baking time will be less. Whatcha think? Thanks
@NikkiVegan2 жыл бұрын
Yay! I hope you love it! Cupcakes would be so good and so cute! I love that idea 👌 I'm not sure what the bake time would be though because batters like this can be tricky...it looks golden brown and done way before it's actually done...Like this bakes for an hour but it starts to look kind done around 30 mins so it's tempting to want to pull it out then but it really needs the extra time to cook all the way through. I'd say as long as the tops are deeply golden brown and a toothpick inserted into the center of the cupcake comes out clean you should be good to go 😊😊 Please report back and let me know how long it takes if you try it out! Hope you have a great Sunday ❤️

Can I change the flour with almond flour or oat flour?
@NikkiVegan Жыл бұрын
I’d recommend a gluten free all purpose flour blend for best results. With the ratios in this recipe, almond flour would make it oily and oat flour might absorb too much moisture and make it dry. I haven’t tested the recipe with gf all purpose so I can’t say for sure, but I think that should give you the best outcome ❤️❤️ Hope you enjoy!
