I love your videos. I put my baigan in the oven when I can cause it actually easier for me. I also fried my scallions in the oil then add it to the baigan choka

You are a great cook Miss Molly ,I like it this way and also the other way you mention ,have you ever tried roasting your the garlic and pepper seperate for your bigan choka on open fire not in foil I would like and if not would you try it and tell me what you think please thank you ❤️🇹🇹

Thank you , yes roasting the garlic and pepper separately would add more flavor. We sometimes do it that way.

Lol...my American friend told me that he ate roasted eggplant choka with tomato in Guyana and loved it and I thought he was nuts but looking at these videos I see you guys actually cook things a little different.

Not being Guyanese, I've never had this before. I only used one of the two eggplants I bought the other day because I don't always enjoy eggplant. As soon as I tasted the first roast eggplant and scallions, you can bet I was wrapping up that second eggplant in the fridge so I'd have twice as much.

I agree it goes best with roti and that is the traditional way to have it; however, eating it with rice isn't too bad.

probably around 45 mins , you roast until it feels soft all around.

Wow this baigan choka look very delicious, I love to have mine with with bake. You really help me a great deal because we never used this type of baigan to make choka but yours came out prefect. By the way I saw you were having a good wine down at Caribana lol jk.

🙂Thank you Savi, the roasting time depends how you are roasting it. Ours took about 40 minutes because it is not the open burner, on the open burner with constant heat will be about 20-25 mins. Just feel to see when its really soft as in the video, that will indicate that it's done roasting.

In India we add mustard oil to all chokhas. do you get mitred oil there?

I would mash the garlic after roasting, drizzel with olive oil, yes I too like a pat of butter and garnish w/whole parsley leaves.

Until it gets really soft when you press on it, time will depend on the amount of heat.

There is no precise time, just roast it until it gets soft. You have to rotate it so all sides can roast, should be approximately 45 mins.

🙂This is the way it is usually done in Guyana, the oil is always heated before adding it to the choka ( not really a chunkay, because the oil is not seasoned) but the oil is usually heated.

You should not limit the use of baigan chokhaa to just oil roti, and say that it does not go with rice. May be it is your personal preference to eat baigan chokhaa with oil roti alone, but baigan chokhaa can be eaten with rice, and dhall. It can be enjoyed as a dip as well.. So I will kindly ask that you do not limit the use of baigan chokhaa to just oil roti or any other type of roti alone.. Do have a blessed day..
