Not being Guyanese, I've never had this before. I only used one of the two eggplants I bought the other day because I don't always enjoy eggplant. As soon as I tasted the first roast eggplant and scallions, you can bet I was wrapping up that second eggplant in the fridge so I'd have twice as much.

I agree it goes best with roti and that is the traditional way to have it; however, eating it with rice isn't too bad.

🙂Thank you Savi, the roasting time depends how you are roasting it. Ours took about 40 minutes because it is not the open burner, on the open burner with constant heat will be about 20-25 mins. Just feel to see when its really soft as in the video, that will indicate that it's done roasting.

There is no precise time, just roast it until it gets soft. You have to rotate it so all sides can roast, should be approximately 45 mins.

🙂This is the way it is usually done in Guyana, the oil is always heated before adding it to the choka ( not really a chunkay, because the oil is not seasoned) but the oil is usually heated.

You should not limit the use of baigan chokhaa to just oil roti, and say that it does not go with rice. May be it is your personal preference to eat baigan chokhaa with oil roti alone, but baigan chokhaa can be eaten with rice, and dhall. It can be enjoyed as a dip as well.. So I will kindly ask that you do not limit the use of baigan chokhaa to just oil roti or any other type of roti alone.. Do have a blessed day..
