This place is totally mesmerizing. Their food is unique yet it tells something about their history as well. We appreciate Mark Wiens for showing us what it’s like to explore places that may not be well known. They sure have a lot to showcase apart from the food they serve. The irony is that they dried the chicken and then immediately cooked it in liquid! [smile] An old method no longer needed since there is plenty of freezing and refrigeration to preserver fresh foods with natural juices intact.

Mark, I am originally from Paramin Village, Trinidad, and watching how much you are enjoying our foods makes me hungry, I am in Canada since 1975, I still prepare all these food for my 3 sons, and sometimes for their friends, so they Trinidad foods. On day my son had a customer who traveled 5 hours to his business, he gave him some food, he asked " where can I get this food to buy "? My son said to him, your parents have come from Trinidad to eat this kind of food, you can't buy this in Canada, I am so happy to see you enjoying the most of the long life living people. @@kat7yann80 Maybe not all the food but there is a place in Ajax called Tropical delight and Drupati both places sell Caribbean related food.. as one is owned by a Jamaican and the other Trinidadian. There's also a place called Caribbean Hot Pot in Pickering Mall where I had curried rice and chicken ^ ^ They had alot of other dishes too.

I've been subscribed to Mark's channel for 12 almost 13 years now. I remember when he first started making food travel videos and when he introduced his website migrationalogy to us. He has come so far. I've always wanted to see Mark go to Guyana and Trinidad..and this series surpassed my expectations with flying colours. My family is from Haiti and I have friends from just about everywhere like Jamaica, Guyana and other Caribbean West Indian places But l must say NOBODY makes Calalou the way a Trini makes Calalou. Oh my gosh this brings back SO many memories of when I visited Trinidad. Maracas Bay took my breath away. Cameras simply could not do it justice and bake and shark! It was soooo good. Definitely one of my favorite foods I ate when I visited. This Trinidad series is making me want to book another flight right now!

No one can replicate Trini spices, composition and texture combinations. They made Indian food lighter, tastier and better. Plus they have Chinese and African influence. How can you beat that combination? I find whenever there is an Indian, Chinese and African fusion in food, it tastes insane. Jamaican, Malaysian, Peri Peri Mozambique are examples. It's the best food in the world when those 3 cultures collab.

Can you elaborate because this comment is iffy when you look at the Food history of Trinidad? For one, If you're basing Indian food off the piss poor Indian restaurants locally, you're being disingenuous. Local Indo-Trinidadian food might win on Nostaligia though. Plus, taste is subjective. And it is lighter as you said. But the whole reason why it's lighter is due to the lack of ingredients available to the Indians to make their dishes when they came to Trinidad. They had curry powder provided by the British and that was more or less it. This powder was created by Indian merchants to trade with the British. This is likely why there is less sauce in curry chicken and why curry chicken is a different dish from Chicken Curry. Considering the fact that Trini spices is heavily based on what was coming out of Asia and being spread by the Europeans as well as what was being cultivated locally by the Indigenous people, I'd say it can be more or less replicated. Composition and texture is debatable. Also, a lot of your examples for insanely tasty cuisines are based off predominately Native, Indian, Chinese, Middle Eastern flavors and spices. Southeast Asian countries basically combine Chinese cooking techniques with Indian spices. Africa Bird eye chillies come from America and Peri Peri seasoning was likely created by the Portuguese. That part is a hot topic though. The Africans contributed certain cooking techniques with the most notable one being caramelizing with brown sugar. Stewed meat and Trinidadian Pelau uses these techniques. I will admit that I personally think that using sugar to caramelize meat etc is something black, possibly creole Caribbean people came up with. I've watched a lot of African people cook but I have never seen this technique. I've never seen Indians or Chinese use it either. I feel like we really leave out indigenous people and their contributions to the world cuisine and especially Caribbean Cuisine. We have banger food. You're right about that. Just wanted to clarify some things based on your comment.

All time favourite KZbinr! It started following Mark ar around 4.5 Mill. subscribers. To see him at 9.37 is so amazing! What i really appreciate is htat he never changed anything. You can watch him 6 years ago and you won't find a different Mark. There are a lot of very famous KZbinr these days, but i think Mark is one of the very few that actually deserves everything he got.

that Brasso Seco plate is really special; love to all the indigenous TnT population Cocoa and coffee often grow side by side (that's what i observed when visited a few plantations) and the processing of both is both similar (picked ripe (wet) and left out in the sun to dry for few weeks and then roasted and ground)

@@stefanjay6856 don't know details myself, but their dishes look really good (dhalalloo stood out for me, beautiful combination got to try that)...and they would use a lot of cassava (one of my fav ground provision) like most indigenous folks do, and maybe breadfruit and fish in their cooking as well; i'm with you but i'll give dem a few tries to see more variety

The pineapple is my fave part since it balances it all out. Fried bake is crispy on the outside and soft on the inside with a buttery and slightly sweet taste, the shark is salty and juicy and well seasoned, the veggies in the toppings add a fresh crispness, but the pine (and tamarind sauce) is where it's at. Not everyone can make it well, but when you get a tasty bake and shark your beach day is 10x better.

I feel your pain ... why not get the recipe ... most of the ingredients aren't that exotic and the shark can be substituted with another type of fish ... like, personally, I don't like shark ... I prefer cat fish, which I think is a popular alternative for the sandwich here ... and depending on where you are, you just might be able to get some of the condiments like tamarind sauce or garlic sauce ... if you can't get tamarind sauce, you could maybe get some mangoes and make curried mango instead (as a substitute) ... but, I know ... in the moment, you were wanting to have bake 'n shark filling your two hands ...

The way Mark says the word "pepper" each time he mentions pepper sauce when in Trinidad. Its like "Pepa" Pig. Love it! The guy puts one spoon of it on the plate. Mark, "just leave the jar on the table please so i can have it with every mouth full".
