Thank you for making a BAKED banana pudding. My mom use to make it this way and I don’t eat it any other way. She couldn’t get it out of the stove hood before we were tearing into it. Kudos for a job well done.

This is the way my mom made it as well. I get so frustrated hearing people say they are making banana pudding and they never baked it. I was like, “I’m out! I don’t want any.”

Honestly you can try with the 7 eggs but use for the 7th egg don't separate the egg yolk so you'll have more liquid from the whole egg. It will just be less meringue but I think it should still work out.

I would have beat my egg whites and had the custard prepared before I cut up the bananas because I wouldn’t want them to turn brown. I would want to assemble immediately and bake.
