This easy baked blueberry cheesecake recipe is a hit among all my friends and family and I have no doubt it’ll be the case for yours. Whenever your plans are for the week, take some time out to try this delicious, fruity, and zesty baked blueberry topped cheesecake. Whether it’s a birthday, anniversary, or just a regular old weekend.
Blueberries come in season in mid-summer and fully ripen over the course of 6-7 weeks. If you want to pick your own blueberries there are a ton of places in East Texas in the hotter June/July months. The reason you want to pick them in their season is that that's when they're most flavorful and the most nutritious. They're low in calories, but high in fiber, vitamin C, and vitamin K.
The base is a really simple graham cracker crust made from finely crushed graham crackers, melted butter, some salt, and some sugar. If you’re feeling adventurous, try adding some amaretto or your favorite liquor to the crust for a kick. If you want to go blueberry all the way, try adding some artisan wild blueberry liqueur.
