Mooncakes are not as difficult to make as you might think! Why not make your very own homemade mooncakes at home this year? Traditional baked mooncakes, a Chinese bakery product, are usually eaten during the Mid-Autumn festival. This festival is also known as the Moon Cake Festival (Zhong Qiu Jie 中秋节 ), because a special kind of sweet cake (yue bing 月饼) prepared in the shape of the moon and filled with sesame seeds, ground lotus seeds and duck eggs is served as a traditional Chung Chiu delicacy. Mooncakes are regarded as an indispensable delicacy on the occasion and are offered between friends and relatives when celebrating the festival.
There are indeed many varieties of mooncakes available today. However, my favourite mooncake would still be the simple traditional baked mooncakes filled with lotus seed paste and 1 egg yolk or better still, 2 egg yolks with the skin baked and glazed to a shiny golden brown. The salted egg yolk in the middle of the mooncake symbolizes the full moon. These mooncakes are quite filling and they are usually cut diagonally into small wedges and shared.

其实,做月饼并没有想象中的复杂!今年在家里亲手准备月饼吧!传统的烤月饼是一种中式烘培食品,也是中秋节的节令食品。农历八月十五,中秋节也被称为月饼节。月饼是一种特殊的传统甜糕,如满月的形状,里头有芝麻,莲蓉与鸭蛋。月饼是中秋节的必备食品,也是送给亲朋戚友的佳节礼品。
如今的月饼有各种各类的花样。但是,最经典的月饼仍然是传统的烘月饼,简单的莲蓉内馅再加上一粒咸蛋黄,更好的当然是双黄,再烘至漂亮的金黄色。月饼中的咸蛋黄象征的是满月。月饼吃起来是相当的腻,所以人们平时都会把月饼切成小片,再和亲友们一起享用。

put baking soda into boiling hot water, or microwave the water with baking soda in it, after the bubble gone and the water cool down , you'll get the alkaline water.

+Kimmy Seah If in Malaysia, alkaline water is easily available in most Asian grocery stores. Its also called lye water or air abu. Yes, I will say you can use pumpkin seeds in the lotus paste but they will be bigger in size and may have a little difficulty cutting through the mooncake. Otherwise, I think its fine. Actually the melon seeds are optional. Some mooncakes dont have it in them. Hope this helps. Thanks for viewing our channel. Enjoy!

What size mould do you use? last year I order the adjustable mould 200 gm and 125 gm from aliexpress pay money but the product didn't come, just the size mould 75 gm I received...Where I can buy the mould?

+Jenny Wong The mould I used for the baked traditional mooncakes is 200gm. You can actually adjust the size of your mooncakes according to the size of mould. I usr the ratio of skin: filling = 4:6. Eg If u use the 75g mould, then I will use 30g skin and 45g filling. The moulds are available in most chinese bakery shops that sells baking ingredients. Its a method to get a smooth and soft mooncake dough skin. You can also try my other mooncake recipes where all the flour is added together with the golden syrup, oil and alkaline water.

Yes, you can. Try mooncake skin 60g and filling + egg 120g.

+Sally Fern It is advised to leave the mooncakes a few days before consumption to allow the oil i side to be released to the surface and infuses the outer layer of dough hence making the texture soft and moist. Hope this helps to clarify. Enjoy!

+Finnel Gudenz Yes, you should try them. Its eaten as a chinese dessert once in a year during the mooncake festival. It has a doughy fragrant sweet skin, sweet and savory filling because of the salted egg yolk. A great accompaniment with brewed hot chinese tea.

+Sammy Li 4. Alkaline water is a very important component in this recipe. It neutralizes the acid in the golden syrup so there will be no sour taste in the moon cakes. It also helps in browning and making the skin of mooncakes soft and fluffy. You can't replace with tap water or boiled water. Hope this helps.

+Cristal Wu You can replace with honey but choose one that is runny, transparent and not too strong in taste. The alkaline water gives the mooncake a beautiful golden crust. You can skip it if its not available, the mooncake will only have a lighter colour. Thanks for viewing.

+Huang Kitchen hi thanks for the reply. i was trying it out yesterday and the finished product is ok except the pastry crust doesn't stick to the filling. it kinda separates once i slice it or even before slicing the top part is sort of inflated.

+Huang Kitchen aside from the wrapping technique. i wasnt able to set aside the dough for 4 hours due to time constraint i used the pastry immediately after mixing and the dough i was able to produce was a bit thicker in consistency and seems drier than in the video. does this have anything to do with my pastry being inflated after baking? or all points to the wrapping technique?

+Al Huang you need to rest the dough before working on it. Anyway, I have another mooncake recipe going to be posted this weekend where you only need to rest the dough for 30 mins. Hope this can help to address your time constraint. But you must make sure to wrap the dough over the filling in the manner mention earlier. Good luck. Enjoy!

+Feneud Hedd Golden syrup is actually light treacle. It gives the mooncakes a nice brownish crust without over baking them. It can be store bought or homemade. The brand name available in US is LYLES. It's normally found in the international foods section. Hope this helps.

+THUY NGUYEN My size mould is 170g. However, it depends on the size of the mould you are using. If you check on my website, I mention the ratio of 4:6 skin to filling. So you first determine the weight of your mould by putting some skin dough into the mould to the brim. Then use the ratio recommended. Hope this helps. Thanks.

+Cow Lin Not sure if you can keep the mooncake skin as never tried. Not advisable though as it may dry out so it may be difficult to wrap the lotus paste. Just make as much mooncake skin dough as needed and if there is excess, perhaps you can make the doll mooncakes. Hope this helps. Thanks for viewing.

现在木制月饼模比较难买得到。若你去新加坡,可以去Phoon Huat, 或Chinatown里的厨房用品老店看一下。最重要的是选刻纹比较深的餅模,效果就会很棒。

+SJ Mathi its actually salted charcoal paste to make the salted eggs instead of using brine solution. Hope this helps to answer your question. Thanks

Though i ate them in moon cakes ,i never realize they were 'salted eggs' (never heard too) .Just seen salted version preparation.Got it.Thanks

You should keep for about 5 days before cutting to eat. And it can keep for weeks. You can also chill in the refrigerator and leave to room temperature before consume.

what size mold press was used?

+Telvin Ciby For this recipe its a 170g mould. Every mould press is different. To get the size, you just fill the mould with the mooncake dough (skin). Then you weigh to get the weight. After that you use the ratio of eg 4:6 that is 4 parts for the skin & 6 parts for filling. Weight of salted eggs has to be taken into account if use. Hope this helps. Thanks for viewing.
