I feel like you are the male Nigella Lawson--although you are a trained chef. It's just that watching you two eat on camera is a joy because you really enjoy food. Makes me want to cook and eat too!

love the fact that he doesnt wast any food. like when he's eating the chicken he doesnt leave any meat at the bone

Hi Chef, spoke to you last night on Chins live stream, I’m a real chicken wing fan so always looking for different recipes, I’ll certainly give this one a try, can you recommend an Oriental online shop for the ingredients? Many thanks and good to chat with you. Mike.

Miso is the best! I make a very similar sauce but with gochujang instead of that type of chili paste. Unreal, i also like honey instead of sugar. Great job!

Those wings look amazing i love both bits they all yummy. Love the egg plant recipe pity we had no luck growing them this year.

When it comes to chicken wings I love how succulent the flats are. I prefer them, even though they don't have as much meat as the drumettes 😁

Wow chef Dai I've just made the miso fried aubergine and it was soooooo nice. I'm following low fodmap for IBS and I really need to make sure I eat a wide variety of vegetables in small servings. Half a small aubergine was perfect as I'm allowed 75g. Thank you so much this recipe is super tasty and satisfying. Bonus I've got the other half for lunch tomorrow 😁😋

I had to look up what “moreish” meant. 😂 I’ll be making these wings very very soon because I don’t want to deep fry in my small apartment. These oven baked wings are perfect.

Thanks so much. I agree, deep frying can be a bit of a chore and stinky. These are a less unhealthy way of cooking but just as delicious.

Would you recommend putting the miso sauce glazed chicken back into the oven for an additional 5 minutes to caramelize the sugars in the sauce?

Dark miso is red miso but aged longer; red miso will naturally turn dark the longer it's stored. If you bought it dark at a store it was probably oxidized for the color.

Hi Susan, thanks so much. I’m not sure what type of miso you have but as Dork said, once miso become exposed, it will darken. If it taste fine, should be fine to use as in this recipe. Hope you’re keeping well x
