Miso is the best! I make a very similar sauce but with gochujang instead of that type of chili paste. Unreal, i also like honey instead of sugar. Great job!

Wow chef Dai I've just made the miso fried aubergine and it was soooooo nice. I'm following low fodmap for IBS and I really need to make sure I eat a wide variety of vegetables in small servings. Half a small aubergine was perfect as I'm allowed 75g. Thank you so much this recipe is super tasty and satisfying. Bonus I've got the other half for lunch tomorrow 😁😋

Dark miso is red miso but aged longer; red miso will naturally turn dark the longer it's stored. If you bought it dark at a store it was probably oxidized for the color.

Hi Susan, thanks so much. I’m not sure what type of miso you have but as Dork said, once miso become exposed, it will darken. If it taste fine, should be fine to use as in this recipe. Hope you’re keeping well x
