Buns - adapted from Peter Reinhart's White Bread variation #1
4 3/4 C. all-purpose flour
1 1/2 t. kosher salt
1/4 C. powdered milk
3 1/2 T. sugar
2 t. instant yeast
1 egg
3 1/4 T. butter, melted
1 1/2 C.+ 1 T. room temperature water
panko bread crumbs
1 egg + 1 t. water (optional egg wash)
Garlic Sauce - adapted from SEODAM's Cream Cheese Garlic Bread
1 stick butter, melted
1 egg
2 T. milk or cream
2 T. honey
2 T. garlic, minced (~6-8 cloves)
1/2-1 t. fresh parsley, minced

Absolutely. I've been memorizing the hard times playlist, surprisingly my friends like this channel too. Something about the MRE and hard times recipes! The survival element and history mixed with food got them hooked now we have the notifications turned on lol.

Emmy, after tracking down yeast for months, after buying flour ($17 for a reg sack of organic flour was all that I could find fter searching for months) and tracking down powdered milk at the Asian market, I FINALLY attempted my first bread this evening! Did I overmix the dough with my kitchenaid? Yeah. Did I procrastinate for a couple weeks 'cause I was scared to bake bread? Yep. Did this still turn out amazing and everything I dreamed it would be? OMGYESSSSS!!!! Wish I had tried this recipe sooner, instead of torturing myself by watching korean streetfood vids and this vid multiple times >.< Thank you so much Emmy

This is actually really cool to see because I'm an oven operator in a baking factory and I bake hamburger and hotdog buns 8 hrs a day and never really gave it much thought on how one would bake hamburger buns at home. I love your videos Emmy.

Dawson Carpenter she could be experiencing respiratory distress from any of several factors. This pandemic has coincided with allergy and sinus season as well, it’s a complicating factor. I’m a hospice nurse, I’m definitely in touch with COVID-19 patients who are dying, what’s really awful right now is they’re dying alone. I’ve never been present at so many deaths by myself before. It happens in my work, but most of the time family can be around...the psychic toll this is taking is unprecedented. Beyond death and the economy we are having little crises everywhere...no funerals, no weddings...all court except criminal closed, animal shelters are overwhelmed and under funded, children are being neglected because they can’t go to school, food banks and churches are closed, domestic violence shelters have shut themselves off. Those of us who are essential are being cut off from our loved ones including our dependents. I’ve not seen my child in ten days :( In my work there’s a strong hint of social work and psychology, we are only looking at the tip of the iceberg when we talk about the virus itself. The profundity of it sinks in deeper every day. There will only be “new normals” we procrastinated 102 years knowing this was inevitable and the silver lining, one of them anyhow is we won’t be caught off guard ever again. Please, don’t give up on mitigating measures, they are working. Staying home is flattening the curve, I believe in our humanity, our resilience and our inventiveness! The worst summons the best and I’ve always noticed that shit (pardon my French) makes the BEST fertilizer.

I just made these!!! So good! It's very interesting, the bread is definitely sweet, but the garlic also comes through very well. The cream cheese filling definitely needs to be doubled, at the very least. I ate two for breakfast... Don't tell 🤫

I just got done making this it’s so yummy!!! Soft and crisp at the same time. Sweet and savory at the same time. The garlic is not at all overpowering just right. 🤤🤤🤤

When I lived in Korea. I disliked the sweetness of their garlic bread at Paris Baguette (a chain bakery). Part of that was likely my expectation that garlic bread as savory. Still this bread is very intriguing to me. I may try this :).

You could cut the sweetening in either the butter or cheese portion. Although I'd probably cut the sugar in both the butter and bread because I also prefer distinctly savory bread. Not a sweet bread fan at all.

Just made it and ate it and even decreasing the sugar in the bread by using no milk powder. Using double the garlic plus a few pinches of salt it was still distinctly sweet and garlicky which I'm sure many will like but I will probably amp the garlic flavor and not add any honey to the butter next time and half the sugar to the cream cheese

I had that same reaction! I love garlic and sweet things, but hated them together. I love seeing Emmy try it, though. I bought some croutons at the end of the day at a local bakery when I was in Seoul and was so confused on why there was garlic.

J. Nguyen yeah, I see myself making it without any added sweeteners (just a small tablespoon in the dough for caramelization). I like a super buttery garlicky bread and love the tang of plain cream cheese so I think any sweetness would ruin it for me

(In NATIVE KOREAN's point of view) South Korea has one of the best street food in the world. If it's safe to travel around the world, FOOD can be the only reason to visit KOREA, as it has crazily delicious food at crazy price... LOVE GARLIC BUNS! :)

@@emmymade Will do, right now I have the bread machine going with a combination of wheat flour, white flour and 3 packets of date, walnut, oat instant oatmeal ( low sugar) that I had kicking around that no one had eaten yet. Its an experiment. Hoping for a decent loaf, sliceable for sunday morning breakfast with a sausage, spinach fritatta.

One of my old restaurant jobs did something similar with a large loaf of Italian bread. The loaf was sliced 3/4 of the way through from top to bottom, in 1-ish inch slices. Crushed garlic, clarified butter, and parmigiana cheese was mixed together and spooned into the cuts. Wrapped in foil and baked 10 - 15 minutes. Every table got a bread basket with 3 slices per guest.

You can do yeast starter by just combining flour+water and a little bit of sugar and leave it on the table top. In day or two wild yeast should be there. It will have bubbles and smell slightly acidic. Cover it so it for an dry out. Search for sour dough starter :D

Just a tip for those who don't know, put your salt in the area across from the yeast, because until the dry dough mixture is combined, the salt will kill the yeast!

Usually I do okay with the fact that I can't eat bread, and especially not garlic bread (wheat and garlic sensitivities). But goodness, this one makes me want to cry! It's a good thing watching Emmy makes it fun enough that it alleviates my sadness.
