I stumbled upon your channel within the last two weeks, and it is my new addiction. And upon watching this episode, I just about died when you said the yellow rose water looks like a healthy urine sample. That was the funniest thing I've heard in the years. Wow, this video is a must-watch for any fan of historical cooking or apple pie! 🥧🍏 I loved learning about the history of apple pie and seeing how it was made in the 18th century. The instructions were clear and easy to follow, and I can't wait to try making this recipe myself. I especially appreciated the tips on using apple scraps and peelings. There are corrections at the end of the Amelia Simmons book under the title Advertisement. The recipe should have called for 6 eggs to a peck of flour (about 10 pounds of flour), not 12 to a peck, so 1 medium egg would probably suffice. I would have also just rolled the eggs in by hand to mix them up (the way you did at the end).

It was so relaxing yet entertaining at the same time watching you recreate the recipe. It’s very interesting getting a glimpse at what they did in the 1800’s. Wonder where those 12 eggs came from? Perhaps quail eggs? 😂 your kitchen and scenes are beautiful

Thank you so much! That’s very encouraging 🥰 yeah, the recipe is kind of confusing. I ended up considering that maybe it meant 12 eggs to a peck of flour, rather than 12 eggs in a peck. I can’t seem to find any information about eggs being referred to by that measurement. A peck of flour would be 8-14 pounds of flour depending on the time period and region… so 12 eggs to every 10ish pounds sounds more correct. Kind of fun!

What about the rosewater? Did it add anything to the other ingredients? I adore roses, but flavoring with rosewater reminds me of bath salts.

The pie dough recipe sounds a lot like a European style pâte brisée. It's usually really easy to do. Much more simple that doing North American style pie dough, I prefer the texture to American pie dough, but European style is definitely easier to make

Seeing as an 18th century cook wouldn’t have had access to refrigeration, I do wonder how the crust would turn out without the butter being cold and the dough being refrigerated after formation.

It would depend upon the temperature outside, and you would have different results. If you were to bake a pie crust right after forming the dough, and it was hot, you wouldn’t have those nice flaky layers from the chilled butter. It would end up being crumbly and/or tough. I have made hot water pastry and it’s still good, but definitely different!

Interesting. In fact, as Apple Sauce is an excellent egg-replacement, it is possible to make this Pie Vegan, with no eggs at all. 🙂 And *how on Titan* would it even be possible to incorporate 12 eggs(!!) in there??? 😂
