This man made a pegoa sandwich! Pegoa is what Puerto Ricans call the burnt rice on the bottom of the pot, which most of us love!! Love this!!
@doggojess
@doggojess 10 ай бұрын
It's interesting how burnt rice has so many different names! My dad's family is Filipino and the word for the same thing is "Tutong" but instead of savory snacks like sandwiches, we use it to make a sweet version of risotto (ginataang munggo)) with cinnamon and coconut milk. We also use it to flavor and thicken ice cream. It's almost like caramel ice cream, but with crunchy bits in it! So good!
@grlnexdoorable

You guys, is this greasy? I have had the Persian crispy rice and it was outstanding.
@doggojess
@doggojess 10 ай бұрын
@@grlnexdoorable Not really! The rice absorbs a lot of the oil and then it burns when you're cooking. That's what makes it crunchy and why you can't get crunchy rice in an air fryer or oven. If you add greasy ingredients to the rice afterwards like meat, then yeah, but just veg and you're good!

@@doggojess idk why I just got this notice, but that sounds delicious!! It might be interesting to add powdered dried shiitakes, powdered burnt citrus peel, powdered loomi (Persian black limes), or something similar to mix into the rice to flavor it before pressing it. That would probably be before or instead of the vinegar/salt/sugar. Instead of vinegar, the liquid could be, in order, soaked water from dried reconstituted shiitakes, the citrus juice, lime juice. Would that be feasible?
