It's interesting how burnt rice has so many different names! My dad's family is Filipino and the word for the same thing is "Tutong" but instead of savory snacks like sandwiches, we use it to make a sweet version of risotto (ginataang munggo)) with cinnamon and coconut milk. We also use it to flavor and thicken ice cream. It's almost like caramel ice cream, but with crunchy bits in it! So good!

@@grlnexdoorable Not really! The rice absorbs a lot of the oil and then it burns when you're cooking. That's what makes it crunchy and why you can't get crunchy rice in an air fryer or oven. If you add greasy ingredients to the rice afterwards like meat, then yeah, but just veg and you're good!

Nice it looks like Kinda Vadagam too from Tamilnadu You can also even grind the left over rice make it a paste by adding salt, onion and then make small portion of it on a sheet. Keep it sun for one day and next day it will be crisp you can fry in hot oil and have it ❤

With left over rice we make rice rotti, just by mixing equal parts of rice and rice flour in a mixer grinder. Later add water and knead to make a dough. Roll out and straight to a pan takes two mins to bake on both sides

It might be interesting to add powdered dried shiitakes, powdered burnt citrus peel, powdered loomi (Persian black limes), or something similar to mix into the rice to flavor it before pressing it. That would probably be before or instead of the vinegar/salt/sugar. Instead of vinegar, the liquid could be, in order, soaked water from dried reconstituted shiitakes, the citrus juice, lime juice. Would that be feasible?

Here in Puerto Rico 🇵🇷 we call that “pegao” cause when we cook our Puerto Rican rice we put oil before start cooking and then the pegao go to the bottom of our pot. I believe is the kind of pot we use, cause all the bottom is full of pegao…yum! 😋We love to eat it with our beans and tostones or amarillos, on the side with whatever we are cooking 😃.

That dish is called ‘Nurungji’ in Korea but normally it’s just naturally made rice crisps from the pressure put on the rice(the bowl forms rice crisps on the bottom of the pan). It’s nice seeing similar dishes coming from all around the world.

There is a white Indian rice dont know the right name cos we call it 'white rice' in south africa, we use it for pitha paksha prayer and to make rice halwa/kheer it has a softer more sticky texture, it might work for something like this
