How To Make A 3 Course Meal For £1.72. Leek and Potato Soup - Mince and Dumplings - Chocolate Mousse. A fantastic hearty 3 course meal for less than £2.00 hat really is baking on a budget. Here is a list of the ingredients.
Leek and Potato Soup.
200g Leeks 0.56p
200g Potato 0.18p
1 Clove Garlic 0.04p
Veg stock cube 0.12p
Total cost 0.90p
4 servings 0.22p
Mince and Dumplings.
250g Minced Beef 1.34
1 Onion 0.09
1 Stick of celery 0.06
1 Beef stock cube 0.12
1 tsp pepper 0.04
Dumpling mix 0.05
Total 1.70
2 Helpings 0.85 per serving
1 Carrot 0.05
250g potato 0.22
30ml Veg oil 0.04
Cost of meal 1.16
Chop the onion and celery and fry lightly.
Add the mince and brown.
Add the stock and allow to simmer for about 10 mins.
Add water to the dumpling mix and form into a small ball.
Chop the potatoes and boil them until just beginning to soften.
Peel and chop the carrot and put in a pan of water on a slow boil.
Heat the oil in a roasting tin in the oven. When the oil is hot, strain the potatoes and add them to the oil with care as they may sizzle and splash in the hot oil.
Put the mince mixture in a casserole dish with the dumplings on top.
Put the potatoes high in the oven and the mind towards the middle, with the oven sat at 180c / 356f / gas mark 4 until the potatoes are crisp and golden and the dumpling is lightly browned.

Thank you. In the UK, sadly, the declining cafes that do Homemade British food have gone. While touring Turkey, I remember Chef Rick Stein saying he wished there were more little cafes on corners, like in Turkey, where they make homemade British food pies and whatnot. It's not until you are older that you appreciate the food of origin.

Yes, I grew up in a family of good cooks so learnt to cook all sorts of food and make it really tasty. I’m now passing it through to my sons. It is always cheaper. I noticed a positive aspect of covid was so many people learnt to cook. I think as people could go very few places ( supermarkets being one ) and were watching a lot of you tube. Cooking is such a comforting and calming activity also.

That these where no supermarkets and often no fridge , people went to the fruit shop and butcher her or fishmonger maybe a grains store if they where feeling exotic . And people ate better in those days because all the extras I.e junk food didn’t really exist . Ready made meals hadn’t been thought of except the odd new fangled American t.v. Dinner Which looked good but tasted of nothing . Statistics show we where healthier as a population at that time

This is brilliant! I home educated my great niece and as part of her maths and home economics lesson she had to plan, cost and make a 3 course meal for 4 people for a fiver. It was before all the BS that's going on, so just over 2 years ago. Food was cheaper but it just shows what can be done with a bit of planning and good budgeting. I regularly make potato & carrot soup which is cheap to make the same way you made your soup 2 or 3 large potatoes 2 large carrots 1 teaspoon of onion powder 1 chicken stock cube 2 or 3 tablespoons of butter 1 tablespoon of sour cream Cut potatoes and carrots very small, about 1 cm square Put butter into a saucepan and melt, add the onion powder Add potatoes and carrots sweat for 10 minutes on a low heat Make chicken stock with about 800ml to 1 litre orfboiling water and add to potatoes & carrots then boil/simmer until soft (less water you add the thicker the soup will be) Empty contents of saucepan into a blender and blend until smooth. Add sour cream and blend. Add salt & pepper to taste.

I miss my mom’s dumplings on her stews! But her dumplings she dropped right on top the entire top of the stew. They almost covered the whole top by dropping spoonfuls right on the soup then cooked as the stew finished cooking. ❤thank you for this recipe ❤

I agree, a marvellous filling hot meal at a terrific cost. And the beauty of this type of meal is not just the cost but provides good nutritional value and it really is easy to do. I love leak and potato soup also and if anyone has some herbs growing in the garden such as thyme or rosemary they are a great addition when making the soup with no extra cost. But it is a personal taste of course. 🍲✴
