I love your channel. You are so genuine and not at all pretentious. Other KZbin chefs act like they are the only ones that know anything and are more than happy to throw all of their credentials at you. You just cook and I love that you don't use any high dollar equipment. I swear your pans lived through the Great Depression!

Wonderful! My mouth is watering ! In all my years of baking I have never made rough puff pastry. It seemed intimidating to me - but your instructions are so clear I think I’ll give it a go ! Another lovely rustic dish. As others have said, I make something similar with whatever fruit I have on hand. Will have to give your dough a crack though, seems lovely. Also, uncooked, they freeze very well. Lovely to have a turn over "out of season"

A very happy New Year! 🥳🎉 That's a wonderful pastry. Never heard of it before, but I like flaky. And I like apple turnovers. And having a baking day 😁. So yes, I'll be trying these. As for the Christmas cakes I made after your instructions, I'll keep the one that got fed with alcohol. I used Amaretto, but will try brandy next time. It was a great success with the family. I ate the last slice today and it was as wonderful as on Christmas Eve!! Except for the fondant which turned soft and wet at some point and I scraped it off. I used only very thin layers of marzipan and fondant, but will probably do without next time. Someone suggested using Earl Grey tea. I did with a second cake, but it got mouldy on top in the 4th week of maturing. I cut off 1 cm of the top of that one and flamed it off with a crème brûlée burner, packed it with fresh paper and foil and put it in a different container. It held until New Years, but after that it started to mould again and I threw away about a quarter of the cake that was still left. I won't be doing that again, even though some of my family members and I preferred the taste of it over the Amaretto one. It was a great adventure and I loved trying something so very different than I was used to thanks to your wonderful instructions. It really is something else to let those cakes mature and enjoy their full aroma and flavour. Thanks again!

Thanks...yes the fat can be grated but I prefer the larger flakes spread throughout he pastry. Grating is good for shortcrust pastry.

Ooh, what a nice holiday tray of goodies. Whew, 3 USA apples would cost 2.43 UK. A tiny little 1 ounce bottle of ordinary McCormick vanilla extract is over $5 (who knew they made such little bottles?) so 1 t would be .68 UK. Cheap store brand butter is over $6 US a pound. All USA prices jumped over the holidays and haven't come back down. The vanilla went up .04 cents since Christmas.

Did he just say 72p for the apples?!? I live on the west coast of the US and I can’t figure where I’d get that price, even if I grew them myself! We have one of the highest GDP in the world - and even as “just a state” we outrank the UK in that respect. When I lived in Washington state (apple central!) I can’t recall finding such inexpensive fare.
