Hi Gareth from Spain. I would do mine as a soufflé omelette. First separate the eggs, add the salt and pepper, beat up the yolks, then beat up the whites until they stand up in soft peaks. Fold in the beaten yolks then add to the filling. Cover the pan with a lid and cook until the omelette wil slide around in the pan and the top is set and starting to lightly brown. Serve with fried bread.

Hi m8 thanks for the down to earth videos. Im an ex gas fitter and the problem with that hob burner is a partially blocked injector. Take the burner cap off along with the alloy burner ring and locate the small brass coloured injector with the hole in it. Take a fine needle and prod it out with a slight circular motion. The injector/s are usually located in the centre but occasionly on the side but always beneath the alloy burner ring, hope this helps mate.

Try doing this next time you do an omelette: stick a blob of butter in the pan. Heat it up and bung some sliced chorizo in along with some pepper, chilli flakes and garlic, once that butter is hot and the chorizo has turned it a lovely colour, throw your beaten eggs in. Then add your other ingredients in and stick it under the grill when the bottom side is done. The spicy chorizo is delicious!

G'day Gareth. I'm not really a omelette person, but I do fancy a seafood omelette with prawns, clams, mussels and salmon. Traditionally omelettes are folded halfway through cooking and then flipped just before serving keeping the egg surface a light brown. Yours was more a omeletizza...being grilled. The ingredients you used would no doubt make for a great taste. I use an old scourer pad to brush mushrooms with. 👍🤤😀

I love an omelette. I used to live off them a few years back. I like to keep my ingredients simple so just a ham omelette for me and a pint of ice cold milk. I whisk my eggs and then into the pan. I rip up my ham and just place it on top of the eggs. When the eggs have cooked enough to allow me to pick up the edge of the omelette with a spatula, I fold it in half. I then continue to fry on both sides for another couple of minutes. Hard to beat.

It's not just your way mate, I love this style of omelette, can't do the poncy "cheffy" way, all loose and liquid. Popping it under the grill as well melts that cheese and forms a bit of a crust. If you like a way to use up left overs (I use it for chicken, cooked veg etc) use about 4 eggs whipped up, shove all your left overs in your pan, let them cook a bit, turn your gas down a bit (or not as in your case) pour your eggs over and cover (use tin foil if you like) this has now become a frittata, I always finish under the grill as you do..... and can be eaten hot or cold. I used to put half in my lunchbox for work, or take on long walks.
