I just made this banana bread. I doubled the recipe and substituted 1 cup of the plain flour for whole wheat. So I used one cup of whole wheat and 2 and a half cups of plain white for the doubled recipe. Since butter's getting so expensive, I substituted half of the butter for vegetable oil. No other changes. I baked 2 loaves for exactly 60 minutes. They turned out perfect. Thank you for the recipe.

And the results? Absolutely amazing. I just finished baking this and truly, the best banana bred I have ever had. Thank you Stephanie. I'm a fan now!

I had two large over ripe bananas I needed to use, and thought about banana bread. I searched a lot of different recipes here on KZbin, but settled on yours because I knew it would work, and I could use just mixing bowls and do it by hand. I hadn't planned on using any nuts, but I did have a half cup of chopped walnuts in the freezer, so I used them. I followed this recipe exactly, even the cinnamon. I used a dark glass loaf pan, and a toaster oven, so I rotated it after 20 minutes. I checked it at about 45 minutes and it was done. After I let it cool I sliced a piece and it was absolutely perfect all through, and had that nice crack along the top, and was a little crispy on the sides. It's SO GOOD!!!! Thanks Stephanie.

Love that you use pecans! Everyone always uses walnuts, but my mom is allergic to walnuts. So growing up, we always made our banana bread w/pecans. I’ve had it w/walnuts @ others homes, but I still prefer pecans after all these years. Pecans are really a good, almost buttery flavor w/the bananas. I can’t wait to try this recipe! I won’t have to alter a thing! Thank you for sharing another wonderful recipe!

I just found your channel yesterday and have been watching a lot of your videos. I love your techniques and recipes, and plan to try quite a few. In particular, you brought back memories with this date bar treat today, because I had this dessert as a child (I'm now a senior citizen and teaching my granddaughter to bake). Your sweet personality comes right through to us! And I noticed that you do something very few bakers or chef instructors do - diligently scrape out all ingredients from the bowls, cups, or whatever you are using. Bravo! It drives me crazy when instructors don't get every drop of the ingredients. How can their recipes work? After all, baking is scientific and correct measurements are key to successful products. It's also wasteful. So thank you Stephanie, for your generosity in sharing your recipes and for being such a great example to those new to baking and old timers honing skills.

Hi Seph, hope you and yours are all well. I've used this recipe many times, everyone always enjoys it. Today I had two large bananas that needed to be used NOW, they were more ripe than you used. They only came up to 300 grams so I grated a cooking apple to make up the rest of the volume, and the results were great. I'm posting this just to say thanks for your work, you've either educated me or bailed me out many times, and to share my results with the small change to the basic recipe, give it a try, it's really good too. BTW, I always laugh looking out your window, that ain't Canada out there...

I made this since had 2 bananas but made big changes. Flour was mix of gultin free & almond. Wet ingredients were 2 bananas, 2 kcups of coco, 1 stick of butter, brown sugar instead of white, cinnamon and 1 oz. Brandy. Yup when mixed the banana liquified and butter didn't mix in left lumps but flour thicked it back up. The chocolate & brandy went well with banana nice flavors and sleep all night
