4 to 8 Pounds of chuck roast or choice of fatty beef cuts
2 cups of water + Extra to soak chiles
4 guajillo chiles
3 ancho chiles
3 dry chipotle chiles or 3 canned chipotles in adobo sauce
1/2 large onion
1 tomato
5 garlic cloves
5 bay leaves
3 Tbsp apple cider vinegar or Pineapple vinegar
3 to 6 Tbsp pork fat or lard
1 Tbsp salt or 2 1/2 Tbsp chicken bouillon
1/2 Tbsp ground cumin
1/2 tbsp Mexican oregano
5 pieces of whole allspice or 1 tsp of ground allspice (pimiento dulce entera)
1/2 tsp of ground clove or 4 whole clove pieces
Optional avocado leaves, cabbage, and beef bone
Barbacoa Tacos

Slow cooker cook time 8 hours slow cook + keep warm 2 hours for extra tender street tacos barbacoa
Instant pot Pressure cook 1-hour slow pressure release
Tips‼️
Have a lot of fun when making this recipe 😁
For extra tender street taco barbacoa in the instant pot. Chop pieces of beef a lot smaller.
If you want to keep the pieces of beef larger; once the slow pressure releases, cook for another 45 minutes
I used 1 Tbsp of salt + 2 1/2 Tbsp chicken bouillon. Please adjust the salt to your liking

You should look at Steph’s recipe for Mexican Street Corn Lasagna to take for thanksgiving dinner too. It’s off the charts. I had 30 people for dinner. I had put out most of the food, MSCL included. We said blessing. I went to get rolls out of oven and in five minutes the whole lasagna dish was gone. Empty. I didn’t energy get a scraping of the dish!

I will have to make your barbacoa for my kids... my mom used to salt and pepper the beef, then topped the roast with garlic, onion and Mexican oregano... wrap it with foil pour water on the sides of the pan and roast in the oven... can't wait to try yours .... yummmm ❤️ 😍 ❤️
