this is great recipe, because he stays original and true to how lamb curry is cooked. With measurements, start with less and add more. For those who are starting to cook, you need to do a taste test every ten minutes when it comes to curry as it evolves quite quickly and add what you think it needs. I would make a recommendation to replace the coconut powder with dark chocolate and add chopped baby spinach as it is coming to a close and see how delicious it is!

I tried it with a twist - Boil the lamb first - in a separate pan, add ghee - a pinch of cinnamon powder and fry the boiled mutton (shallow fry 3 minutes) - keep it aside and then in a separate pan started with your recipe - onions - ginger garlic paste etc and then added the ghee fried lamb, ahahaa trust me, it was the best thing ever chef !

dear chef sanjay, plz dont mind if i give my suggestions !! if u r cooking lamb, then first u should soak it in garlic water for sometime so that funny taste is gone. then after draining, u should be frying (bhuno) it a lot in yr curry mix and oil so that it tastes better and there is no rawness of the meat. in fact all meats should be bhunoed quite well. then u can do or add anything.your dishes look splendid, but i would not eat them as i am sure they gave a raw flavour !!!
