I've tried the eggplant cheese before and it is my go-to queso recipe!!! I LOVE that recipe. I make it for non-vegans all the time and they love it too! Sometimes I add some veggie sausage as well.

This was so, so good. The jackfruit came out really tender and caramelised. I especially loved the eggplant queso - I added a couple teaspoons of tahini which I think gave it a richer, more rounded flavour, and a good squeeze of lemon juice to brighten it up. The cashew cheese was awesome too. Awesome nachos, leftovers also taste great in wraps.

I normally cook my jackfruit in a crock pot for 6-8 hours and it makes it real tender. give it a try, I think you might like the results.

I do mine in the slow cooker. Rinse the Jackfruit and dump it in, hit it with a masher, dump in the garlic/onions/sauce, give it a stir to coat everything. Put the slow cooker on high, and walk away for 4.5 hours. Don't peak or stir, because it kills the heat in the slow cooker and ruins your caramelization on the edge pieces.. I do the same method with "carnitas".

watching this motivated me to go to my local korean store and buy a few cans of jackfruit. I found a really easy and DELICIOUS sour cream recipe. its like yours but with sunflower seeds and a little apple cider vinegar added, but i didn't add nutritional yeast I hate that stuff :P can't wait to try these nachos! thanks for sharing

I LITERALLY just cooked with jackfruit for the first time (in a ciabatta with avocado though), literally as in I haven't even washed up my plate yet lmao. I'm obsessed with it already- and the aubergine cheese sounds ingenious (although I think I'd struggle to blend it up once roasted, as roasted aubergine is my favourite but) I'm totally going to try it this weekend ❤

Funny, I just made BBQ jackfruit last night for the first time. I did basically the same thing but used Trader Joe's sriracha barbecue sauce. I read a recipe that recommended finishing it in the oven like you did but I was too lazy to get the oven involved so I just cooked it on the stove for a while. It was great, I'll definitely make again but now that you've recommended doing it in the oven as well I'll give that a try.

I love fruit salsa's! Damn these nachos look so good! I have never thought of finishing the jackfruit in the oven before. I've only cooked it with some seasoning and BBQ sauce in the crockpot and made a mock version of carnitas. I need to play around with jackfruit more and try the oven method for sure. Great video!!

few questions, if you remember on this video. ..what kind of bbq sauce do you recommend? how long did u cook jack fruit in oven afterwards & temp.? what is that thing on the baking pan, or is it a special lined pan?

I used one of the BBQ sauces from Trader Joe's but I'm not entirely sure. I baked it at 400F for about 15 minutes. The pan is lined with a silicone baking sheet -- one of my favorite kitchen tools! I have several of them and use them every time I bake.

Since jackfruit is often used to mimic pulled pork, which you make by cooking long, low and slow, I was wondering what happens if you braise the jackfruit in the oven for like 6 hours, will it feel like it's falling apart or will it not work well?

That sounds promising. I would guess you'd want to add some sort of fat in there, maybe a little oil, since pork is quite fatty? Just so that it doesn't dehydrate.
