The trick for picking good corn is if it's heavy for its size and the outside should still be slightly moist. I get mine from the farmers market picked that morning.

Love this idea! I actually love playing with and experimenting with mock meat ideas, especially ones that are homemade vs a store bought product (which is cool too!) As someone who is trying to transition my entire family, I feel that it gives them the familiarity of meat in meals that they still really enjoy. Rather than the actual exact taste, the texture is what my family craves and recipes like this tend to satisfy that craving. Can't wait to try it out! Sarah perhaps you could have your sister give you a few of her top favorite omnivore meals and challenge you to recreate them vegan style and you guys could taste test them together? 😊 Thanks for the vid ✌🏼 Jess

Lol ok so I made these and I said "Hey Boo, try those vegan ribs I made, they're pretty good!" He says, "ok...I will." (eye roll). That was Sunday, so last night, Monday, he says "oh hey, btw, whatever those bbq-y things in the fridge are are pretty damn good!" Me: "Yeah babe, that'd be those vegan ribs I told you about" (eye roll) smh... Lol slowly, oh so slowly, he's coming around. He actually told me yesterday that he's thinking about joining me being vegan...(I've been vegan 7yrs as of 8/04/17) Lol ;-) Yay!!!

What a great idea! I haven't seen anyone else add jackfruit to vegan ribs for the stringy texture. How long did you knead the dough? That will affect the firmness of the dough. From your descriptions of the texture it sounds like the dough could be kneaded a minute longer. Gluten development for the right texture is a tricky thing. It doesn't take much for it to go from too soft to rubber bands. 😏
@SarahsVeganKitchen7 жыл бұрын
I just kneaded it for about a minute but I think you're right -- a little bit of extra kneading could be a good call.

great recipe! i think if you maybe pulsed the jackfruit a little in the food processor, the jackfruit pieces would incorporate into the whole a lot better. also, tossing the drained jackfruit around in the dry ingredients will adhere the gluten onto the damp jackfruit which will also help hold it together better.
@SarahsVeganKitchen7 жыл бұрын
You're right! I want to try using the food processor for a finer texture next time.

Megan Meyer , I've watched other KZbin's, and they said to lightly boil for around 20 to 30 min. let cool then continue with the recipe. I've been wanting to try it in various recipes, but haven't been able to go to a Asian market, too far away from me. I just received a case from amazon today. so excited. if you don't mind a longer tutorial, Connie's Rawson kitchen posted a really in-depth recipe just like this. I think I'll try Sarah's to.
@chemistryflavored7 жыл бұрын
Megan, I had the same experience but I've actually found it may depend on the brand you are buying. I do find Trader Joe's to be more brine-y (although for many it's the most accessible). I recently found some at my Natural Grocers (not sure if you have one in your city) but theirs was better, it also shredded nicer. It was the Nature's Forest brand. I know Asian markets carry it too. You may just need to look into other brands.

Just a technical tip (and you probably know this already so sorry to nitpick), you can't sauté in water, you're either steaming it or boiling it, or braising in water I guess which would essentially be a combo of steaming it and boiling it.
