Here is an easy, budget-friendly dinner recipe that feeds four. Homemade soft flour tortillas, refried beans, salsa, and agua de pepino are all staples in my home and are economical. The bean and cheese taco is not only a comfort food but got my family through hard times.

• Soft Butter Flour Tort...
TORTILLAS INGREDIENTS
3 cups all-purpose flour (400 grams of flour)
2 tsp baking powder (7.5 grams baking powder)
8 oz hot water (236.59 ml water )
1/3 cup butter, lard, or shortening (65 grams) *use only 1/4 cup (59 ml) if using oil
1 tsp salt (5 grams salt)
INGREDIENTS FOR REFRIED BEANS
1 1/2 Tbsp bacon fat
1/4 cup diced onion
4 cups cooked pinto beans
1 tsp chili powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp ground cumin
salt and pepper to taste
INGREDIENTS FOR AGUA DE PEPINO CON LIMON
1 large cucumber
1 large lime
1/2 cup sugar
3 cups water
pinch of salt
1 lb of ice
Bean and cheese burritos

Growing up, I didn’t know that Mom’s homemade cornbread and pinto beans was a budget stretcher. All I knew was it was delicious and is still one of my favorite meals. On grocery shopping day, she’d bring a pkg of weiners and a loaf of bread to the park and we 4 girls would get to play and eat (and feed the ducks) before we had to go shopping. It was a special treat for us and a tradition I carried on with my kids.

Yours is a beautiful story. When I was a kid, my dad made certain dishes (he was Hungarian) that he grew up with, and I loved them. So did friends from school who came over. He later told me all he made was "food for peasants", because he grew up very poor. My mother grew up here in the States during the Great Depression, and she too grew up very poor and made so many dishes from that era that tasted so good. Today I have the most wonderful memories, and isn't it amazing that yesteryear's budget-friendly foods are sometimes served in popular restaurants and very popular today. Happy reminiscing!

We too, used government cheese that our elderly neighbor was so kind to give my mom when she was a single mother raising 4 kids. We didn't have much but we learned to appreciate the little things in life all the way to the present day. How I miss that government cheese and butter. Everything looks delicious. I love how Everything was made from scratch. As an avid reader, I'm very picky about the books I purchase but if I see it's worth buying; I definitely buy it. I have literally been making these all week for breakfast till today cause it was payday. I was using some Mayocoba beans that I had made for refrying, then some canned when we ran out of fresh. I threw a fried egg on the tacos for a few days too. It always slaps. 💖

Such a well-timed video from you. My grandma just passed last week, and I remember her telling me a story about growing up poor in Compton in the 30s (dirt floor, no interior plumbing), only being able to afford taking bean tacos to school for lunch, and how she would sometimes trade her tacos with the white students who brought sandwiches.

Honestly thanks so much for this video, I grew up on beans and tortillas for dinner 2-3 nights a week. Honestly it’s the only meal I can eat and not crave like a protein like chicken or beef. I know my son will never have to worry about where our food comes from now, even through we are struggling my parents help us when they can. Im in tears thinking about how tv was never a thing for me growing up but a bowl of beans and a round table we would sit and eat and talk for hours. I hope one day in the future my son will value these moments like I did as a teen. As a child I hated it lol 😅 I wanted to play and watch Pokémon but we couldn’t. One of my favorite go to meals. I was fortunate to have grown up in a neighborhood where we had several Hispanic families living there. It was so awesome to go home with a friend and smell all the delicious aromas. I tried to watch what they were doing so I could make these foods at home. We had tacos often, just not often enough. I am vegetarian so I exchange some other tasty item for the meat I don't use. The different spices perk up anything!!

I love homemade beans! That is what my step mom used to make and always loved them! Dry beans are so inexpenaive compared to canned. About the salsa, i guess i have only seen chunky, but i bet that would be good for a smooth texture.

I always ordered bean and cheese tacos but one day the waitress came to take my order, I say i'll take two bean and cheese tacos, without looking at me she says "you want bacon with those?" I just stared at her for a second, she looked at me, and I said I DO want bacon with them! since that day, that's the only way i'll eat them. I make them with the thick bacon at home :)

I had no idea how, but started making my own bean and cheese burritos. I also started cooking my own beans. I would eat this if I won a million bucks tomorrow. Is one of my favs. I have to use low carb bought wraps, would love to try these though. I don’t season the beans but I add garlic in my beans along with the onion. I didn’t know what seasoning to use but would like to try. I live alone, and it is great to make a bowlful and I can grab some when I’m hungry. Thank you for the ideas!
