Inspired by the documentary, Living on One Dollar, I started making beans and rice dishes to save money and eat on the cheap, but I'm also convinced it doesn't have to be boring or bland. So here's my version with around 40 grams of protein per serving for about $2.50 if you shop for bargains. This is two big servings here, I'm getting three meals out of it so I can have a couple lunches too. The leftovers freeze and reheat super easily.
