This summer in Europe has been absolutely brutal. We're only halfway through July, and already there have been three relentless heatwaves, breaking temperature records.
That's why today, I want to recommend something specially designed to combat this extreme weather - Lemon Bars!
These Lemon Bars are a true delight, with their golden and luscious lemon custard filling and a melt-in-your-mouth buttery pie crust. They offer a perfect balance of tangy sweetness and refreshing coolness, providing relief and comfort to your stomach after a meal, making the scorching heat a thing of the past.
Pako and I have been enjoying them for over a month now and plan to continue indulging throughout the entire summer 🤣
Here's what you'll need for two 21cm x 14cm rectangular molds of Olive Oil Sea Salt Lemon Bars:
[Buttery Pie Crust]
* All-purpose flour: 190g
* Granulated sugar: 90g
* Cold butter: 170g
💡 In the video, I also added a small piece of cream cheese along with all the ingredients to add a subtle savory contrast. The darker specks in the crust are from the cream cheese bits.
[Lemon Custard Filling]
* Granulated sugar: 100g
* Egg yolks: 3
* Cornstarch: 8g
* Sea salt: 1/4 teaspoon
* Homemade lemon jam: Approximately 148g (combined weight of the above four ingredients)
* Unsalted butter: 30g
* Extra virgin olive oil: 20ml
💡 The taste of store-bought lemon jam may vary, so adjust the sugar amount according to your preference. Pako and I don't mind it on the sweeter side, but if you want to reduce the sweetness, you can start with 60g of sugar and adjust after tasting.
💡 You can also experiment with other fruit jams. I've tried a combination of half lemon jam and half sweet orange jam, and it worked nicely too.
[Decoration]
* Sea salt flakes: As needed
* Powdered sugar (for dusting): As needed
