The direction that entities face, when copying it off of the direction that another entity is facing, is based off of angle and not what they're looking at. Dinnerbone mobs are just like normal but their models have been flipped. Therefore, assuming this mod doesn't change the up and down directions of yaw for upside-down entities, a normal horse that Jordan rides would face the opposite direction. A Dinnerbone horse would face the same direction he is facing when he is riding it. TL;DR: normally when riding a horse it looks the same way, when upside-down Jardon rides a Dinnerbone horse it's like a double-negative and they also look the same way. ...I think. This comment is more meant for the sake of curious viewers but Jardon if you do happen to read it you may find it useful as well for a later playthrough. Concerning the locating of strongholds, and how to portal almost directly into them every time, with only 2 eyes of ender throws needed to locate it if you're careful. The first thing to note is that strongholds generate in rings, centered at 0/0, and all at the same level of rotation off of each other. This means that for the first ring holding 3 strongholds, whatever direction you find the first one in, the other two will be roughly the same distance away and just 120 degrees off in either direction from the angle to the first. The next ring is over twice as far out and contains 6 strongholds, all 60 degrees off, etc. Any rings outside the first one will not be important for something like a speedrun but may be interesting for use on a more long-term or public server with the first 3 already fully explored. The closest ring is roughly between 1,400 and 2,700 blocks out as a radius, which means it may be within 1,000 on both the x and z axis if it's at a 45 degree angle. Now for the process of location. Take your first eye of ender and throw it, and keep a very close eye on the angle it flies in. I would suggest throwing it directly upwards and then turning to face it before pointing down so your measure is more exact. Also take note of the block you were standing on when throwing. Once you retrieve the eye, go back to the block you threw from, turn 90 degrees, and walk roughly a hundred blocks. You could do fifty if you're particularly confident in your ability to work with much smaller angle changes, or more for more accuracy. Throw the next eye and note the angle as well as the new block you're standing on. This gives you two distinct points and lines associated with them. Now you just need to use a little math (provided below to plug your numbers into) and you will have the exact location of the stronghold, which you can divide by 8 to get your portal location in the nether. Line 1: X = ( x coordinate of 1st throwing spot ) - ( tan( angle the eye went on 1st toss) )*( z - ( z coordinate of 1st throwing spot ) ) Line 2: X = ( x coordinate of 2nd throwing spot ) - ( tan( angle the eye went on 2nd toss) )*( z - ( z coordinate of 2nd throwing spot ) ) Plug those two line equations into any graphing calculator you like and find the point they intersect, and there will be the stronghold. Provided a 100 block distance between tosses and assuming the angle is measured to within a half degree of the true one, you should end up within a couple chunk radius of the portal room, close enough the eye would always fly down. The one exception is that you must make sure the two lines are very roughly similar in angle. Should one be very different, it means that you were pointing at different ring-1 strongholds on the two throws, and will need to go the opposite direction from the first throw and use that third point/angle instead of the second. - A friendly neighborhood mathematician.

If you are wondering why the portals generate in caves, it is most likely because there is an ocean above and that means that there is no space above ground to generate the other portal (It must have a space that is open and on the floor) and the nearest working spot is below in a cave.

I have gotten luckier then Jardon did with his stronghold. I was in a world with broken maps and I settled at a desert village, I made a house and started to make a mine, at a y-level of about 55 I found the stronghold and a room over was the end portal.
