Beef and vegetable soup
Ingredients and recipe:
Beef (rasol or atricot) - 800 grams
The beef is washed and cut into portions, then boiled in 2 liters of water with a teaspoon and a half of salt.
Collect the formed foam.
Cover the pot and cook on low heat, in small boils.
After about an hour and a half, remove the pieces of rasol and debone them. Put the meat from the stew back into the pot.
Chop the vegetables:
Onion - one piece
Carrots - 3 pieces
Parsnip - 2 pieces
Parsley root - 2 pieces
Celery - 100 grams
Capia/fatty pepper - one piece
Put the chopped vegetables in the pot, add more hot water, if needed, and boil everything for 15-20 minutes.
Potatoes - 400 grams
Peas - 200 grams
Tomato paste - two spoons
Chopped tomatoes 300 grams
Borscht - 300 milliliters
Salt, parsley
Dice the potatoes. Chop the parsley.
Add the potatoes and peas and salt, if needed.
When the potatoes are cooked, add the diluted tomato paste, the chopped tomatoes and the previously cooked borscht. Boil everything for another 5 minutes.
Sprinkle with chopped green parsley.
The soup is ready!
