Creamy red lentil soup with vegetables. Healthy fasting recipe, filling, easy to make.
Ingredients:
Red lentils - 400 g
Onion - 2 pcs.
Carrots - 2 pcs.
Parsley root - 1 pc.
Celery - one slice 140 g
Red bell pepper - 1 pc.
Garlic - 3 - 4 cloves
Cherry tomatoes - 6 pcs. or a large tomato
Vegetable or olive oil - 40 ml
Salt - to taste
Pepper - 1/2 tsp
Sweet paprika - one teaspoon
Dry mint - 1/2 tsp
Cumin - a teaspoon
Optional: Chili flakes - to taste
Chopped green parsley
Coarsely chop two onions, 2 carrots and a parsley root.
Dice a piece of celery and a red bell pepper.
Slice 3-4 cloves of garlic.
Dice a large tomato or 6 cherry tomatoes.
Sauté the onion for 4 minutes in 40 ml of oil. Add ½ teaspoon of salt and the chopped garlic, then the carrots, parsley root and celery. They continue to roast until the vegetables begin to soften.
Add bell pepper, ½ teaspoon pepper, one teaspoon paprika, ½ teaspoon dry mint and one teaspoon cumin.
Add the chopped tomatoes and saute together for 4-5 minutes.
Add the washed lentils, soaked for an hour in cold water and then drained.
Add 1.8 liters of warm water and salt to taste.
Simmer on low heat, partially covered, for 35-40 minutes.
The fire stops.
Puree the soup with a vertical blender.
The result is a creamy soup, without chunks of vegetables, consistent.
Sprinkle with chili flakes (optional), dried mint and chopped green parsley.
We serve the soup with croutons and optionally soured with lemon juice.
