We actually lemon or lime juice to cook raw meat in Vietnam. Try duck blood soup. Yeah it’s cooked by lime juice.

French Tatar is incredibly similar to German Mett. The difference is that tartare is made with beef and mett with pork. It is also done and presented differently. But this is Italian carpaccio. These are thin pieces of beef that are also made extra thin. Serve with green vegetables, Parmigiano Reggiano, salt and pepper + lemon. Incredibly delicious and perfect at the end of spring and perfect in summer.
