I used to eat this in Hong Kong and loved it. May I just point out that you used the word "infamous" incorrectly. It means famous for being bad, e.g. Jack The Ripper was an infamous serial killer.

I really love your recipes that are lesser known in the West; I’m always interested in what people eat and why some things are beloved. I think things are changing and people are hungry to connect with other cultures, and we no longer judge things as weird or scary. There’s absolutely nothing here anyway that would be unfamiliar to most people, and it looks absolutely delicious. I’m a huge fan of chewy, jiggly foods, so homemade rice noodles are perfect got me.

Her channel is what the Foodnetwork used to be like. It's actually teaching rather than just entertaining. She is a really good teacher and thorough in her explanations. This looks SO good. I'm Vietnamese and we use a very similar rice/tapioca dough for making chewy clear dumplings (banh bot loc) and long chewy strips in sweet desserts (like che dau do), but I've never thought of using the dough for noodles! The texture must be so good and chewy 🤩

Wow ! I would never make this dish, but if I ever find a restaurant that serves it, I will try it ! I've made so many of your dishes & bought your wok, being one of the first to order it. I use it so often as it can cook nearly everything. Tomorrow, I'm making the Sesame Chicken with a twist of adding orange juice to the sauce. My bf is allergic to garlic,onions and pepper, so I do have to adjust the recipes, but with your help, I've been able to make several of your dishes perfectly! Thanks for keeping your program so interesting & yummy. And love your new huge kitchen ! That beginning one was so tiny, but mine is too, so your ability in a small space gave me courage ! I think I like the name rat tail noodles better since it has more character! All cultures have foods that might seem weird to an outsider but are comforting or familiar to those who grew up with it. Elephant ear mushrooms, Head Cheese, Ladyfingers don't even cross my mind as weird but to someone not familiar might hear those names and be like what???

@Z I grew up eating "bangers and mash", "bubble and squeak", "dippy eggs with soldiers", "spotted dick", "blackbird pie", and "ants on a log" (amongst many more funnily-named dishes). At a pot-luck at work I wrote on the sign-up list that I would be bringing spotted dick and the boss called me into the office, thinking I was making some thing up and being funny!

Hi Mandy, I always appreciate your videos and watch them all. Lately, I've noticed the audio is very faint. Is everything working correctly with your lavaliere microphone? Ever since you switched over to it, audio has been somewhat muffled but lately, it's gotten worse. This isn't happening when I view other youtube channels on the same machine, so I think it may be an issue with your equipment or something else specific to your channel. Thanks!

if you want to use normal flour, I suggest just use regular noodles. This recipe is not limited by the types of noodles.

I am hoping your wok would have spout on both sides in case I am left handed or right handed. And there will be a handle on the other end so I am able to lift it with contents as sometimes they get heavy with food and I won't be able to lift it up.

Very interesting. I've had beef chow fun at a Hakka restaurant many time but I've never seen these noodles. These are similar to Italian pici. Personally I find the name rat tails hilarious. 🤣 🐀

I tried making this but the noodles didn't come out right, tasted gritty and raw. Waited for them to float up and another 1-2 minutes before I took them out. Not sure how I botched this up but can't say I'm surprised.

use a bigger pot and more water to cook the noodles. The noodles will drop the temperature when you add it to the pot. You need a lot of water other wise you are cooking the noodles at a low temperature.

They do look like rats' tails! The name reminds me that my mom used to call peanut butter and banana sanwiches "mousemeat sandwiches", because the banana slices turned grey when the sandwiches were fried in butter. You can imagine what happened when we asked for mousemeat sandwiches in a restaurant!

Don't worry about the naming of those noodles. In my country, there is a type of noodle that looks a bit like these, only shorter and thicker and one of the regional names for them basically translates to "little boy penises" so I'd take something like "rat's tail" over that any day /shudder

Fun or fen (粉) refers to starch noodles (usually without gluten, such as rice noodles, mung bean noodles, sweet potato starch noodles). Mein or mian (面) reders to wheat noodles (gluten involoved). The wide rice noodles in beef chow fun is consider as one type of fen (粉). The noodles in this video is made with starch (rice flour and tapioca starch), so it is a different type of fen (粉)
