You guys got to check out "Taoyuan Street" beef noodle soup (桃園街牛肉麵/老王記), they have one of the best stewed beef noodle soups in Taiwan (yes, not just in Taipei, but the whole of Taiwan lol). It's more of a "traditional" beef noodle soup place that has been there for generations, and well known to a lot of older foodies.

You should try phá lấu in Saigon. It's beef intestine soup. We usually eat it with bánh mì, sometimes with instant noodles as well.

This place is very traditional and has pretty good beef noodle soup. You can add their home made spicy oil which makes your beef noodle soup even better. 林家藥燉原汁牛肉麵大王: 110台灣台北市信義區吳興街281巷9號 (No.9, Lane 281, Wuxing St., Xinyi District, Taipei) or 永康牛肉麺館: 106台灣台北市大安區金山南路二段31巷17號 (No. 17, Lane 31, Sec. 2, Jinshan S. Rd., Da'an District, Taipei) There 2 places are top of my mind when I think about beef noodle soup in Taipei.

I feel like African and Asian cuisine share a lot of similarities in how they approach using the animal in cuisine. Here in the U.S you’re never going to find tendons or tripe or even pork belly at your general grocery store for the most part. When cooked well these underutilized parts of meat are so delicious 🤤
