Chris M true foodies don't buy everything expensive. They experiment with different types of food which gives them a different experience and they are able to recommend the best restaurant by their personal preferences or in general. If you go to somewhere expensive all the time then your most likely an exotic food lover. It's very rare to be in that category as something as simple as a scallop finely presented on a large plate could cost you as much as someone's weekly salary at a fast food restaurant ($300).

Hi Mike, I tried all 3 in my previous trips before and just like you, I had to try the 牛爸爸 beef noodles once. It was really nice because I knew that the beef quality was more superior than the others, but honestly speaking, I can't enjoy it as much as the others knowing the price of it. My favourite go to beef noodles is still 永康街 beef noodles. If you are willing to splurge on good beef, you should try 大腕, they BBQ different cuts of beef right in front of you to tender perfection, but you need to make reservations at least 1 month ahead.

Considering people pay 300 bucks for an aged beef or salted ham I don't see why this is surprising. It's a way to preserve food. It doesn't make the meat less expensive just because it isn't "fresh".
