I never did spritz these ribs. I had it ready, but they were moist every time I checked.

? what is the difference between this with wood chunks and a smoke tube (sometimes i do use 2 smoke tubes for extra smoke)

It much. Whatever the difference is in the two forms of wood and the type of smoke they put out is all. I use a smoke tube in my vertical.

Just do them in a WSM with charcoal and post oak chunks. No pellet mixing, no ity nity wood chunks. get the pit 180-225.

@@TheAmericanSmoke I do believe I posted my set up on your FB group. My 18" WSM and my 22" Performer all on one cart. I gave up on pellet grills and do strictly charcoal and wood chunks. Being in an apartment no stick burners. As is I'm pushing my luck. I do have a Fuego gas grill for quickies but, am looking long and hard at a flat top.

I’ve never smoked them detached, but I would think that the bone acts as a barrier to hold in some moisture. I have detached them post cook and sliced them to serve in previous cooks, and that went well.

When looking for these types of beef ribs you need to tell the butcher you want 3-4 bone of chuck ribs. You likely need to ask the butcher as they cut them into short and flanken ribs. Most are sold in a pack of two. Around here I get them at BJs wholesale ($6.99lb), Publix and Sam's. But it's def something you talk to the butcher for. Do t get the beef back ribs, they come from the ribeye and have way less meat.

I'm finding most beef ribs near impossible to find. Costco, BJ's. -None. I can only find short ribs, which are great and meaty but also pricey and have different application. I don't know what's going on but are you having the same problem finding beef ribs other than short ribs?

Yeah, living in the mid south, beef ribs are very difficult to find. Smaller butcher shops sometimes have a few racks in their freezers, but they are usually overpriced. Check with local butchers though. You may get lucky. Thanks for watching! Smoke on!!!

@@TheAmericanSmoke I'm on the East Coast and there's not too many people smoking out here, thankfully! It's only this year where it's been a problem, definitely going to have to look at a local butcher shop. Didn't even think of one cuz we don't have that many. Thanks for the tip!
