I grew up watching Emril! He was my favorite TV chef as a kid. Now as a wife and mother of 4….he and my grandmother are in the kitchen with me everyday as I cook nourishing meals for my family!

Rabbit meat is sold in classier, gourmet type establishments, but it's pricey...about like Shrimp, Lobster, good steaks, Crabs, Oysters, Clams, etc. Rabbits are lagomorphs, not rodents and are 100% white meat, extremely low fat, lower in Cholesterol than any meat except fish, very high protein and quite tasty. It's the biggest meat sold in China and the fastest growing meat in popularity world-wide. I just wish they were as ugly as sin. Lol People raise fish in farms, but fish don't cuddle and hug you and rabbits love to be petted. The best thing is not to think of them as "bunnies" and never name them except by number. They are game or livestock, born and bred to harvest. You're not killing "Bugs" or "Thumper", but they are very cute, very intelligent, trainable and sweet, and they make great pets...but then so do pot-bellied pigs, mini-goats, mini-horses, etc. If you ooh and aah over cute little animals you might want to limit your rabbit experience to pets or totally avoid being around the live variety. Even chickens can be cute and until they grow spurs and peck you, they make cute pets that eventually become Sunday dinner.To balance it, rabbits can gnaw through wood and have teeth that grow 4 inches per year. Rabbits can be mean, can bite to the bone and draw blood, and if frightened or nervous they can claw you open with those hind legs...rabbits are the universal prey for snakes, hawks, owls, cats, dogs, etc and especially humans, so they are timid and skittish.

You can find rabbit in a lot of stores, usually cut up and frozen.

A lot of people don't know that he started out cooking with Julia Child when he was young. I'm glad he had her as a special guest on this episode.

I remember Julia's show when she invited Emeril on to do the crawfish boil. Julia and Friends was a great show that gave MANY chefs their start

pity it got chopped way too soon ... I hate when it's not the full episode ... becuase he makes complimentary dishes on each show ... and Julia Childs input wuld have been awesome as well ... I know she would be adding in her bucks worth

Does anyone wonder why many TV celebrity chefs are successful? It's not because they cook better than the average mediocre chef, it's because they exude confidence, in other words they fake it till they make it. Try this in your own life in any situation and you will be successful. The truly great individual is the humblest. TE

too prep the rabbit. gut and skin 24 hours in salt , water and ice . dry then place uncovered in refrigerator for 3 to 5 days till rigor is gone

I sat next to her at her Birthday at the Highlands Inn in Carmel Highlands many moons ago. What a great lady, I did a Coffee luncheon with her and Prof. Illy (bless both their souls) and it was a huge success. I was honored to have met her,

Because there are teleprompters to tell them do it. This is a big network show and the audience is part of the act. This has been a thing since the old live sitcoms of the 50s. The audience must do as they are told. And frankly it is part of the Emeril show to do the stunts like 42 cloves of garlic (yeah it was more like 4) or his Bam thing.

I never understood why everyone always cheered and clapped for the garlic? I love garlic, I just find it odd that as soon as he mentions it, the crowd goes nuts. Is it an applause sign overhead? If so, why clap for garlic? I just always wondered is all.

+austin rouse I would suggest thinly sliced potatoes, or leaks.... something earthy that absorbs a lot of flavor. You could also think about throwing in whole mushrooms for the taste, and taking them out at the end.

Did he say "breast?" When you piece a rabbit you get front legs and rib cage, loin, and back legs. There are no rabbit "breasts"

Emeril... you WERE such an Icon to Cooking... Number 1. Did you run a video that doesn't have a part to so we don't know how to finish it ... Look at KZbin. You have been such master at marketing and making your products and knowledge available that it makes me disappointed that I can't find part to to finish this video and this recipe. I am trying to teach my children how to cook wild game and I thought that you might be able to teach me how. I'm disappointed.. Further, bringing Julia Child's out, the goddess of cooking and Classiness That she is after she is had a stroke and cannot speak publicly is very disappointing. It seems like a publicity stunt... Although I can see that she is happy to be there, and I Pray that she is! It's still makes me sad to see where you have fallen. This message is from a good old Louisiana boy...

I use to get my rabbits from hunting them..Emeril...where do you get yours ? OHHH Commerial Rabbit farms.. are you against hunting Emeril ? against guns ? but OK with rabbit farming ?
