Exactly right. The bagged shredded cheese has that coating to keep it from sticking together, which doesn't melt as well. Always use freshly shredded cheese. Fantastic beer cheese bowl, Jeff! 👍💯

Dust your shredded cheese with cornstarch before melting. Technique from Alton Brown's fondue recipe.

I think that's what they basically do with the pre shredded cheese. Keeps it from sticking. It will also make any melted cheese thicker, and gritty. I don't recommend, but maybe I haven't done it right....?
