How about a video on effectiveness of water pans. It should act as a better buffer than air. Maybe test a lot of water vs a little. I'd love to see it

One thing I did on my offset smoker was drilling a 7/8" hole on the bottom-left corner of the lid to move the Tel-Tru in a better spot. I find cooks much more relaxing since I did away with digital probes and chasing temps.

I ended up using a River Country adjustable dome thermometer on my WSM and calibrated it to my top grate level using my ThermoWorks Dot. It works SOOOOOOO well. On my last cook the dome and the grate level probe were almost always within 1-5 degrees of each other. IMO, if it’s so hard to find the right placement, just find a decent spot and calibrate to grate level.

Drill a port hole on the side and then you can use a therma pro. You can then move the probes anywhere you want with the metal clips that attach just above the grate. Saves tons of potatoes. Plus u can use the wireless meter to sit in ur chain and drink Molsons

I did the dryer vent mod and use cheap oven thermos on the grate. Barely 15 deg difference side to side . Even less of a difference if it's loaded with food.

Lol.. I got a free small homemade 35-40 lb "propane tank" Reverse flow smoker and the thermostat is even right by the exhaust, and it'll probably be easier to use temperature probes, before I go drilling holes.. lol

What are the stem length on the thermometer? I was somewhat surprised at the difference in temp between a 2" 4"and 6" stem.

I’ve been seeing a lot of people complaining about the ambient of the meater and they don’t really rely on it. I’d cross check with some good wired therms.

It’s strange that almost all offsets place the temp gauge at the top, we all know hot air rises and those temps will be way off!

Did you calibrate the thermometers? I wonder if you can calibrate the thermometer to adjust for the height difference.

Could you get a thermometer for each hole you drilled and install them permanently for this to be an on going test and maybe 123,456,789 cooks later say which is the best position? Yeah... you should do that, you will feel like a pilot while smoking.

I have a reverse flow Oklahoma joe and I never cook on the right hand side. That’s where I leave my water pan.

Wow how come manufactured they do all this test ? And place the temp monitor on the right place :) Man 👨 I have Camp Chef 36 inches pallets smoker :) Just cooked two 20Lb briskets and one pork butt my new Record I don’t know somethings wrong with my grill or was with my meat 23:23 :)

Hey Steve. I just got an Oklahoma Joe’s Longhorn (the 3-in one smoker/grill/gas grill). I just switched from a Webber Kettle and I feel like the smoke flavor on the Webber was a bit stronger. I wonder if maybe I’m doing something wrong on my new offset. When smoking, I’ve used my MEATER and it’ll be at 225 and my dome thermometer will be at almost 300. I’m wondering if maybe my temps are too high that it’s leaving the smoke zone. According to the dome it was high, but the MEATER showed it was at the right temp. Any thoughts? Thanks I’m a big fan.

How much wood vs charcoal are you using? If it's mainly charcoal the smoke flavor will be less. Also with a hotter fire it will mean less smoke. That being said, nice clean smoke isn't necessarily a bad thing. You might just be used to dirty/smouldering smoke from your kettle

I Have one and the factory gauge reads about 50 degrees hotter that whats at actual mid grate level... I usually run it at 275 to 300 according to the factory gauge to get me to that 225-250 Sweet spot at grate level...

Why not just buy a inkbird you can but the ambient thermometer anywhere you want each time and use the app to check the temp.

I looked at them for measuring the temp of my firebox but none I saw go above 600 or so degrees. It would be interesting to see what the smoker looks like through one

Lol this is really really funny. so much over thinking with probes , potato’s and drilling holes oh my…. Just get a drum so much easy to maintain and u get better Bbq … ps i have Drums , kettles , pellets and reverse 60 stick burner… I had a joe years ago thankfully i no longer have it

Brother, you need a ThermoWorks Signal and drill a 1/8” hole at grate level for their ambient temperature probe. Easy peasy, lemon squeezy.

Because it measures ambient temp in the exposed side and that's the spot he wanted to check. He explained all that. Either you didn't watch or you missed the point.

I just use an oven thermometer. $8. Yes I have to open the lid but it works for me.
