When you are going gluten-free one of the hardest things is finding the right Gluten Free bread... and NOT going broke! lol, I am NOT a baker, but have figured out it is super easy to do this in my bread machine!!! If I can do it... YOU CAN FOR SURE! :D
It tastes AMAZING right after it is cooked with some butter and honey! But let it cool some before cutting or it can collapse some! I also make sure to toast the bread for sandwiches and when I eat it with soups or stews!!
RECIPE :
* I said 3 cups of flour in the video but it's 3.5 cups*
3-1/2 cups Pamela's Gluten-Free Bread Mix (if you use REGULAR Gluten Free flour, you will need to add 1 tsp salt, and 2 tablespoons sugar) amzn.to/2QL8Fbk
2-1/4 tsp active dry yeast or 1 yeast packet 7g
2 large eggs
1/3 cup oil 75ML
warm water (after adding eggs and oil, fill to two cups worth of water) (16 oz or 500 MLs)

I just tried your recipe for making the bread. It turned out great. I used Bob red mill 1 to 1 baking flour and added all the other ingredients you mentioned plus the following: 1 teaspoon salt, 2 tablespoons sugar and a extra 1/4 cup warm water into the dough while the machine was mixing it. Seemed a little dry while it was mixing. The bread turned out soft. My machine is a rosewell(looks like the wolf gang puck one), it has a gluten free option. It came out nice and soft. About to make another loaf. Thanks for this amazing recipe.

That makes sense that you had to add the salt and sugar, as the bobs red Mill is different then what I used. My mix has that included, so I am glad you made it work for you!! ❤️ I am so glad I could help! 😊

Thank you for this comment!!! This is my first time ever making bread. I just found this video and hopped up to make it, I've had the ingredients. She mentioned hers was included and that it was important (thanks for that tip too btw) so I came to these comments to try to find what I needed to add, you're both amazing!! I happen to also have the Bob flour

You saved me, I bought a bread maker (I've wanted one for so long) and I've wasted so much time and money trying to master a decent bread. Every fail is so disappointing, feeling regret for thinking I could do this at home. Pamela's flour was the magic change. Thank you for doing this.

I am curious about the size of your bread maker. I am Celiac and got a bread maker for Christmas. I have unsuccessfully made 6 loaves so far. Even the loaf following the machine's recipe failed miserably. My machine makes 1 or 1.5 lb loaves. Your's looks larger. I am not sure how to tweak the recipe to make it smaller.

Measure the flour by weight. The flour bag will give the grams per 1/4 cup, or 4 Tbs. King Arthur GF is 33g, thier recipes use 120 g per cup. This method is much more accurate and gives consistant results.

I have made this twice already with Bob's red Mill flour and adding the salt and sugar. We did the two hour bake in the breadmaker and it sinks a little in the middle, so this time I will try the 4 hour cycle. Our breadmaker does not have three hours. But, the bread is still so amazing. I almost cried. Gluten free for 20 years. My son is begging for bread everyday now. Thanks so much!

FYI - I see so many videos and recipes that insist yeast needs sugar to rise. It does not! Case in point, France has a law that states if a bread is to be called French bread the only ingredients used are water, salt, flour, and yeast. Nothing else! By all means add sugar to a sweet bread (cinnamon rolls, etc), but it is not needed in regular bread. 😊

Well French bread is a bit different then sand which read in texture. 🤔 honestly like I said I am not professional baker I just know this recipe works well for me! I’d love to hear if you try it without sugar and how it works for you! I’d be very interested to hear back !

I am a Dx'd Celiac for 20 years and really suffered back in the day with dry crumbly products. So glad to see someone else hacking up Pamela's too. 😄 I always buy Pamela's bread mix, not in that size but I always add apple cider vinegar too! I started doing that when I found I had a package that I lost sight of and realized it was past date. I didn't know if the yeast that came in the package was still good or dead. I added some ACV because it was very slow to foam up, and then it started to foam. I had the best risen bread that time ever!!! I always do it now automatically!!! We have multiple GF here too, some Dx'd some not but they eat those products too...no one noticed the addition of the ACV, I never added two full Tblsps measured. I just pour! hahahaha! 😄 Another hack: I also add some ground flaxseed or chia seeds or even psyllium. No one notices that either, but it adds fiber back into our bread that would be in whole grain bread that is otherwise not in GF bread. So sad to learn Ancient Harvest bought Pamela's. Although Ancient Harvest is a great company! I hope we don't lose the charm of Pamela's, as she started that company and changed the game of GF many years ago. Too many times larger companies buy out smaller ones and just swallow them up! So fun to run into this video...I think you have the same bread machine I have!!! 💗🙏🌺

Thanks for sharing this recipe is amazing. I have been trying to find the perfect blend and recipe to make gluten-free bread and I found it . I switched the oil for vegetable shortening and I got it today 1/8 teaspoon of salt and also half a tbsp honey. I have a question if I were to substitute the yeast in this recipe what would be a good suggestion to do so. My husband can’t have yeast, so I know there are certain substitutes for yeast but which one would be correct for this specific recipe and how much would I use of it?

Aww thank you!! I really appreciate the feedback!! If you don't use the bread flour mix, for sure you need to add the sugar and salt!! 💞 It is very hard to sub for yeast. You could try 2 tablespoons of baking soda, but I don't know how it would come out exactly. 🤔 Let us know if you try it!!!!

Thanks for this, I have tried many combinations over the years but after watching your extremely helpful method, I used it yesterday to make the first successful loaf, it was a little on the dry side, but I shall add some oil to the liquid next time. Being in Australia the brand of GF mix was not available, but I used Laucke, which seemed to work fine. Although it had never worked satisfactorily before, hence the proof that your method is excellent

Gf bread can dry out so easily! That is why after the first day I recommend toasting it to make your sandwiches, it holds up well that way!! And makes fantastic french toast or bread for stuffing!! 😁👍 But please share how it goes for you!!

I tried this recipe for my brother-in-law’s visit. I was only able to find Krusty flour. I added the sugar and salt as you suggested and followed the directions exactly. Set it on gluten free. It came out with a sunken top and had a very bitter taste. What went wrong? Was it the brand of flour?
@DianaSprague
@DianaSprague 11 ай бұрын
So not all GF settings are actually best! I recommend doing the “quick bread” setting that is 3 hours. I have never used Krusty flour so I do not know if that is a good one. Also try leaving it in the bread machine at least 30 if not 60 mins after it has finished to cool off. That helps it hold its shape better (I have learned some tricks since making this video 5 years ago!

I tried this recipe for my very first attempt in my new bread machine. Although it was very tasty, the loaf deflated in the center which resulted in about half the loaf being unusable for sandwich bread. I wonder what I did wrong? The loaf looked proportionate when it was baking, but after it was finished it started to deflate. I had to jump on a work call so I couldn't pull it out immediately when it was finished backing. Did I wait too long? I didn't think it would hurt anything by leaving it in there an extra half hour or so. I googled the causes for deflated bread and there were a million reasons. Lol!

Lena, wha5 a brilliant video! You made me realize that I’ve been treating my breadmaker like some kind of magical cauldron, requiring a precise spell, rather than a practical machine, with functions which can be adjusted 😃 Turned out a similar recipe to yours was in the booklet, drew on both, with stuff I already had, made the closest thing to bread I’ve had since going gluten free. Amazingly, I have an Hitachi HB-201 Plus Convection machine that looks exactly like yours does! On the Yeast part I would use the faster Quick rise version on the Rapid shorter cycle. Very interesting video. There is a lot of talk nowadays about 'Going Gluten Free' 'my friend is 'Gluten Free' etc. As someone who was diagnosed with Celiac disease more than 50 years ago I feel quite irritated. Celiac Disease is a serious auto immune condition. Sufferers have no choice but to follow a strict Gluten Free diet which can be a 'nightmare' when eating out especially when travelling. There is no way I would follow this diet if it was not necessary. I always ask the server to tell the chef that I have Celiac disease and the diet is not a choice. Often I cannot face eating out, explaining, showing my dining card etc. In this way I end up saving a lot of money! An appeal to all you folks who have 'gone gluten free' - please spare a thought for those of us who have no other way of staying healthy.

Hi Diana. Thanks for the video. I have not tried it yet because first I live in Europe and Pamela’s flour mix is not available. This bring me to my questions? Is the flour you use a bread flour that includes already some form of emulsifier like xantham gum? I have used the Schär all purposes gluten free flour. So I am trying to figure out if I need to add xanthan gum to the recipe. Also my bread machine doesn’t have a gluten free setting. With wheat breads it says to use the quick setting when using instant (or rapid rise) yeast and the basic ( the 3.5 or more hours) setting when using dry active yeast. Which type of yeast do you use in your recipe? I am curious to know how many times the dough rests and rises with a gluten free setting.
