It says sorghum flour in the caption as you are adding buckwheat, but you don’t mention sorghum flour.. 🤔 Do we add both or??

@jessicaharris4899 Hi! Thank you for pointing that out! Yes:) 1/4 cup of sorghum! I mention playing around with flours within that 2 cup amount. If you don’t have sorghum you can make up that 1/4 cup with another flour😁(not a starch though). Happy gf baking!

Someone sent a question in yesterday that I can't seem to find to respond to it...so I thought I would try to answer it this way "Do you know the various times for knead, rise & bake for your preferred cycle? Between GF setting and 3 hour setting...No I do not know they difference in the cycle between the two, but the setting I use, kneads at 5 minutes and again at 30 minutes. Additionally( I hope this helps:) our daughter uses THIS RECIPE on her GF setting and it works great. I simply use the regular loaf setting because it is what I have al😀ways done.

I like you this is great I just got a new bread machine that has a gluten-free setting blah blah blah. I'm kind of like you know a little bit of this little bit of that but I know it's going to be a little more specific with gluten-free so I love the fact that you have fun with this so thank you very much for your video

@joseynoyb9467 Awww thanks! I try to help others just get comfortable. I KNOW the settings on the machine feel a little to MUCH FOR ME :) LOLOL! SO I have stuck to the 3 pound setting for so many years now because it works. I hope you make a loaf that you enjoy! Happy GF Baking!

@julieackroyd1890 I have always kept the bread in a large Tupperware for max 2 days when the kids were living at home! Making bread every 2 days- it would disappear!! Now, I mostly keep the bread in the freezer with some wax paper or parchment paper in between the slices. I sometimes take out 2 slices the night before or an hour before lunch, for a sandwich, when I don’t want to toast it!

@christotty5132 Hi! I can’t recall exactly but I believe around 2 hours! It’s been a while since I’ve used that setting. I like the loaf we get with the 2# loaf setting-3 hours 😄

This is what I needed. Almond flour and all the other healthy ones. I'm tired of wondering about store bread. I use stevia. Will it work in a bread machine??

Hi @adeline9418! I have done some research on the idea of stevia in the bread recipe since I too love to use it instead of sugar here and there (& every Moring in my coffee😊) but it it’s researched that it doesn’t activate the yeast! All I’ve read over the years is the need for a small amount of sugar. So with that being said, and only needing 1 Tablespoon in this recipe, maybe cut it in half of your after less to no sugar ?!!? I’d hate for you to have a flopped loaf that may make you sad.

I have a family member who is sensitive to gluten & eggs & almonds … makes it difficult to make bread. Do you have a good recipe for bread for someone w those sensitivities?

Hi!! I have helped/recommended my basic formula for the bread recipe and switch our the eggs with "chia eggs" (1 Tbsp chia seeds + 2.5 Tbsp water = a chia egg) "flax eggs"(1 TBS flax seed meal + 3 TBS water) to replace egg. And to avoid almond, no worries, you can add one of the great gluten-free flours on the market! Like sweet sorghum, buckwheat, millet, amaranth and even quinoa! They are rich in protein and you can play around within the basic formula for this recipe. Just make sure you have the starch flour (like tapioca, potato, or arrowroot starch/flour) I hope that works for you. Happy New Year!

I have read numerous times that it is best to weigh your flour not measure by cup. Thoughts. Also what can I sub for the buckwheat flour please. TY

Yes!!!! Weighing is always the best way! My scientist daughter and I differ in this method. I am a home, “get it done” cook / need based baker. 🫣 That’s where my recipes come from. So I couldn’t agree more for those with a great passion for baking- weighing is the best option most times👍🏻♥️ You can switch the buckwheat out with more brown rice flour or sorghum -or if you want to try a different flour like millet:) If you don’t react to oats - I LOVE to add gluten-free oat flour. It’s a milder flavor in the loaf!

Aww thank you! Give that replacement a try. If you have any other GF flour you can substitute it out...I just always try to give caution on the flours that have a heavy "earthy" flavor some ppl don't care for. for example: I can only add quinoa or buckwheat to this recipe in smaller amounts if my hubby is eating it:) LOL He's a bit picky! Hi there! I don’t have a specific recipe with only those 2 flours but do you feel comfortable switch out part of the flours here for coconut and almond? If you do perhaps 1/2 cup coconut flour & 1/2 cup almond & reduce the brown rice flour amount by 1 cup! That would be a NICE loaf🍞🍞🍞 Let me know if you try it😁😁

HAPPY NEW YEAR!! No it is not too salty! And I DO LOVE SALT! I think this bread is more hearty and lends itself great to the salty items like cold cuts, salted butter, and flavored cream cheese!! NOW I AM HUNGRY LOL!!

Hi! Great Question! Sorry I don't have a pix BUT I am making a loaf tomorrow...and I will post a quick video for you to see the dough (I'll see how I can attach it here for you too)! This video the dough comes together less like a wet batter! The videos I have of 1 1/2 cup water definitely would be in the wet batter category:)

I am a Coeliac , so I have to stick to a gluten free diet, the store bought bread is really expensive and very disappointing, so I’ve just bought a bread making machine, but after 6 attempts they have all failed , they all come out as really heavy

Hello Steven, Have you tried this recipe yet? Or on my page go to our recipe from years ago, reduce the water content in that recipe to 1 1/4 cups. It’s a more basic white bread recipe. Let me know if you have an questions.

Fantastic!!! After cooled and sliced i wrap the slices in parchment or wax paper and later in a ziplock/ plastic bag and place in the freezer. Can last up to 3 months ( but never seem to make it😋)!

Technically speaking it would work😀. I believe in the past my eldest daughter used “flax eggs” (1 TBS flaxmeal + 2.5 TBS water) in place of the eggs❤️

Oh my goodness Mary I agree completely! Over the 19 years we have gone through so many bread machines it would boggle the mind! 🤪 (Of course I am using it less since I don’t have kids at home) I find LOVE our “sunbeam” bread machine & it work perfectly! Hi Thank You for the recipe. I was thinking about making it now but I have a question. Can I use psyllium husk instead of xanthan gum? Can I use any setting or the gluten free setting? I have heard that the gluten free setting doesn't cook it enough?

Good questions!!! You can absolutely add psyllium husk- I’m fact I do have some recipes where I do that BUT I haven’t ever excluded a gum of some sort. Are you able to use guar gum? If not on the gums … perhaps going 1 TBS for psyllium husk and see how that works. ( the reason I mention that amount is I notice many ppl add 1 - 2 teaspoons to recipes and I think a touch more might just work😁 Please let me know how that works!!! As for setting- I am Embarrassed to admit this but I had one bad batch using the gluten-free setting many years ago, and I haven’t revisited that setting 😅 . My daughter uses her gluten free setting on her newer bread machine (Cuisinart Compact) and it works fine!

@@GlutenfreeandME I have tried using the gluten-free setting in the past and I don’t know if it was the recipe or it was the gluten-free setting. I just don’t feel it was done enough. So I may not use the gluten-free setting again. I can use xanthan gum but I found that psyllium husk is great with breads. I’m just not quite sure how much to use. Maybe I’ll use a teaspoon and a half with the xanthan gum. I hope it doesn’t come out too gummy.

@@GlutenfreeandME I made the recipe yesterday although I changed a few of the flours because I don't like brown rice flour. So instead I changed it to white rice flour. I also added some millet flour. It came out like a hearty type bread. It was ok. I think next time I'm going to mix it first because I didn't really like the way the bread machine mixed it. It didn't look like it was mixed thoroughly. Next time I think I'm also going to add a little bit more water. I actually added one cup of almond milk and a quarter of a cup of water because I ran out of almond milk.

@@ritaweinstein4056 I LOVE that you are playing around with the flour!! I couldn’t agree more about the bread machine mixing!! Ugh it’s not perfect- years ago, I found that if I waited around and scraped the sides during one of the two mixing cycles it made a BIG difference. So much so that I made a short video once just for that tip 🙋🏻‍♀️😉! The water makes a difference too when you’re adding in psyllium husk (or flax meal I noticed) too. Thank you a bunch for letting me know! We’re always learning from each other🥰

I love that you asked this b/c I’m a big fan of using other flours like millet, amaranth, quinoa, gf oat( if you are among those who can tolerate),sweet sorghum, a bit of flaxmeal, and i prefer a bit of organic brown rice as well. I have found that some of the flours can have a bit of harsh taste when you use too much♥️ I hope that helps. Reach out if you want more!! Happy GF Baking !

@@GlutenfreeandME I am fairly new to baking GF Very new to bread making I’ve been avoiding bread for a very long time I’m intolerant of so many ingredients I have started to make my own in order to have some. I am sooooo very glad you answered Experimenting with baking is like being in a science lab! I have to look into these choices now. I will try the organic rice flour. I’m the queen if experimenting and honestly not everything is glorious!😂 But what i noticed was the real earthy tasting flours tend to overpower if they aren’t matched with a milder taste. Remember the general rule of thumb: 2 parts protein (flour) 1 parts starch( potato starch, arrowroot, tapioca) and always add some kind of thickener or stabilizer.
