I made this in a slab style pizza with many different toppings, thanks for the recipe! On one quarter I did mushrooms, green peppers, and feta cheese Second quarter I did green olives, and cherry tomatoes with partly skimmed mozzarella 3rd quarter I did diced turkey bacon with green peppers and feta Then the last quarter of the slab I did green olives and pineapple with the partly skimmed mozzarella You're the best man, thanks for this crust recipe!

This recipe actually works! Thank you! I used thawed, frozen cauliflower rice in the bags from Costco, (I’m too lazy to grate cauliflower), drained the water from the bags, one bag per pizza crust. Smashing the bag and squishing the water out, put in a bowl and added a cup of Parmesan cheese and one egg per bag of “rice” patted it out onto parchment and cooked it at 350 F until golden brown, flipping over if needed for further cooking. I didn’t make pizza with it, I just enjoyed the crust as a flat bread.

Thank you, I just doubled the ingredients and made this in a 12" Cast Iron pizza pan (no parchment paper but very well seasoned though) and it came out amazing. I went with pepperoni, mushroom, onion, green paper, sausage, and bacon. I also added fresh garlic and basil with my own canned sauce from our garden last year.

Just wanted to mention that you have been instrumental in my renewed interest in eating pizza on keto. This is by far the best recipe I've found online but I made a few tweaks to the seasonings and think this has got to be the best pizza ever made and is even better than a regular crust pizza to boot. I added Italian seasoning, garlic powder, onion powder, red pepper flakes, and salt and pepper for a kick and it's outta this world delicious! And for the toppings, I added hot banana peppers, pepperoni, spinach, mushrooms, black olives, on top of a homemade tomato sauce with even more spicy pepper flakes.Thanks for the inspiration because if I hadn't stumbled upon your recipe, I'd still be trying to figure out how to live for the rest of my life on keto. 😀🍕 Gotta love spice!

Just made this the other night. I added about 1/2 cup more grated cauliflower since I knew it would shrink after it cooked in the pan for a bit. I added a little more cheese, about two tablespoons of almond flour for extra stability, and since my eggs weren't large I added two. It came out so amazing I couldn't believe how delicious it was!

Chef Buck, thanks for keeping the recipe simple and easy to follow. I appreciate how detailed your explanations were throughout the process. Using kitchen utensils that the common house hold has was a major plus! I didn't have a pizza pan so I used two pie pans instead. I cut the dough in half and opted to make two individual pizza's with different toppings. I cut my parchment paper into a circle that fit the bottom of the pie pan. I didn't know how much cauliflower I would need and my grocery store only had small cauliflower heads the day I bought the ingredients. I bought two small heads and I ended up only using one to make this recipe. I bought generic brand shredded Parmesan cheese and generic pizza sauce. I didn't add any additional seasonings. And it still turned out delicious! I just used the veggies I had in the fridge to throw on as toppings (onion, bell pepper, spinach, jalapenos, and tomatoes) My son put turkey ham, hot-dog, and cheese on his (it was actually pretty good). We didn't mind the taste of the cauliflower crust. We can't eat gluten and out of all the gluten free pizza recipes, this one is by far the best! It's easy, delicious, and you can go the cheap route if needed. 100% recommend!

As far as how much cauliflower you need for this recipe, just remember “A pint a pound the world around”. The recipe calls for 2 cups of cauliflower and there are 2 cups in a pint so you need a pound of cauliflower.

We just made this pizza crust for dinner, and it was fabulous. Thank you so much for the "top of the stove" drying tip. It took longer than expected to dry out but it turned out perfectly. I can't stand wringing food out in my tea towels. My pizza did not stick to the parchment paper but I did lightly oil the paper first. We topped it with sauce made from tomato paste, olive oil, garlic and herbs, then some mozzarella cheese, pre-sautéed turkey sausage and mushrooms. A little parmesan and arugula on top made it even better.I watched quite a few videos for cauliflower pizza crust, and yours is the best!

Made this for the first time today. INCREDIBLY DELISH!! Can't even taste the cauliflower, lol. I added 1 tsp unrefined coconut flour/garlic powder/crushed red pepper flakes and oregano to the crust prior to baking first time. Then topped it w a quick no cook sauce, added fresh mushrooms, sliced provolone and baked it till cheese melted. AMAZING. Even better than real pizza crust!! Thank you Chef Buck for an awesome recipe

My boyfriend was sceptic about me trying your recipy but guess what? He Loves it. We are both Keto and love to have pizza at least once a week. We tried other recepies but nothing worked out. Your recipe is the BEST OF THE BEST👍👍. By the way I used the chopped cauliflower from Costco in the frozen section and each bag is about 4 cups. This is what we use to replace the rice. You definitely nailed it by pan frying that cauliflower and drying it out! I've made many cauliflower pizza crusts and always have to add almond flour (I don't eat grains) so it would hold together. Great video!

Ok well I made it today and it turned out perfect. I DID remove the water out by squeezing it it a cloth after cooking it. Used high quality Parmesan and Asagio hard cheeses for the crust. Great tip! I put all kinds of delicious toppings and it was fantastic!!!! This pizza is def 2 thumbs up! Will be making this again day after tomorrow in order to use up other half of cauliflower head and the rest of the hard cheeses so they don't go bad. Folks you REALLY need to make this pizza it was FABOULOUSLY yummy! I put garlic powder and dry oregano in the cauliflower while I was warming it on the stove to add flavor. This was totally amazing! I just made this tonight! Exactly as shown, the crust looked, smelled and tasted amazing! But then once it was baked with sauce etc, it got floppy and the extra time in the oven lent the crust a slightly bitter flavored from getting burned. It literally went form 4 stars to 1 star, but hey, I learned a valuable lesson! My takeaways are: cost the crust REALLY well with cheese and maybe put sauce on top of that (sounds weird, but it would keep it from turning soggy). Also next time,I'll use a blend of flavorful cheeses instead of mozarella. The Moz alone was so flavorless and rubbery. I think between the cheese lacking flavor, and the other toppings being pretty mild too, it just didn't offer enough. But the crust though....that is great on it's own!

Backwards pizza is a good idea, never tried it... Try baking it 2nd time on one of those racks as seen in the vid, I use mine over the pizza stone and it helps crisp up a little bit after adding sauce and toppings (1st bake needs parchment). Also make sure to use whole milk good quality mozzarella such as Gabaldi, though in my experience, Boars head deli sliced mozz works excellent. Also cooking it 80% 1st time then broiling on rack works just as well. Cheers and good luck!

I just made this & am blown away. I had attempted to make it before - the long way, including the cheese cloth; it was a failure. Just used your recipe (doubled it to make for a family) and it was AMAZING. Thank you! My 13 year old son who isn't a huge fan of my chicken crust pizza, loved this one... So thank you! 5 star recipe! I tried other recipes before and it was a complete disaster . My dads diet is completely gluten free and he suffered because he could not eat pizza (I tried with gluten free flours but their taste is not pleasant). I think that's how they do it in Italy. They might have one topping on their pizza crust..cheese with some herbs or something. It's we Americans who put a bunch of crap on our pizza crusts.

Chef Buck (AKA Uncle), this is the tried and true best cauliflower crust recipe ever. I make this at least 3x each month since googling "how to" about 14 months ago. It's THE BEST, and yep...structural integrity is the key. I thought I'd post some things that are important to do and not to do based on my friends' experience. They needed more guidance with 3 ingredients, but it's important! DO if lazy: Buy frozen cauliflower rice. 2 packages = 4 cups. It's more expensive, but... Do NOT: Rush drying the cauliflower rice, especially if you buy it frozen. Remember, Chef Buck says you are not cooking or (worse) browning, but simply drying the rice. Don't skip or rush this first step. Have patience...I dry it for about 30 minutes over low heat in a big, non-stick pan, tossing every 2 minutes (fold laundry) Do NOT: Get creative and season or "freshen up" the crust. Keep perfection as it is and make it as described! Get creative with toppings! DO: Let the dry cauliflower fully cool before mixing with eggs and cheese! Many non-cook friends made scrambled eggs by accident, and got frustrated/angry. :) DO: TRUST your eyes! If you oven is at 400 and they are not golden brown and bubbly after 20 minutes, let them bake. I've baked for 20 minutes all the way to 40 minutes depending on the size and oven. Use your eyes. DO: Let the crusts FULLY cool before you put toppings on. STRUCTURAL INTEGRITY!! DO: Make a crap-ton of these, bake and freeze! They are delicious right from the freezer to the oven. YUM!!! Do you find the crust gets soft or soggy at all if put right into the oven from the freezer...? Do you put your toppings on the frozen crust before putting it in the oven, or do you put the crust in the oven first to defrost it, take it out and let it cool, and then put your toppings on it before putting the whole thing back in and cooking it...? Have you ever tried defrosting it in the Microwave first before adding your toppings and putting it in the oven...?

@THE SCHOOL OF ART Every cheese has to be processed, otherwise how do you even expect to have cheese ...just because something is 'processed' doesn't mean it's unhealthy, depends what ingredients you put in during that process. Real parmesan cheese only has 3 ingredients, otherwise it's not even Parmesan :)

Just made this using a large stainless steel fry pan and it was awesome! Great job on the recipe Buck, loved how you simplified it! I ended up using a softer cheese, colby jack mostly and still came out great. Sure beats all the work making a regular yeasted dough especially for me cuz I need gluten free. This was so simple and soooo delicious!

Dude. Thank you so much for this. Prior to this video, every time I attempted cauliflower crusts, they had the consistency of mashed potatoes. Stayed together just about as well as mashed potatoes, too.
