do you mean that partial water should remain in khichdi? normally, we prepare khichdi where no water is left in it and almost dry khichdi is left. please guide

Not necessarily , some like their khichdi to be very thick and some like it to be watery. It is a personal preference. When in doubt , never abandon your personal taste preference , after all food must be enjoyed :)

Yes , you can replace the rice with millet. I prefer foxtail millet.🙏

@@HappyBellyfish Great, thanks for the fast reply! I will try this - I love basmati rice, and have never found a brand of brown rice that doesn't taste like cardboard, so this will be my option to make this kind of dish more healthy…

@@HappyBellyfish I am living in Austria, and there is only one kind of millet available here, it is called "Goldhirse" or "gold millet". The packet does not tell me the botanical name. The grains are quite brightly yellow, until they are cooked, are about 1mm - 1,2 mm in size, so a bit like 1,5 times the size of regular quinoa. It seems to me that they need more cooking time, and more water, than is stated on the packet - but it seems a close time-frame, as the time from "tender" to "mush" is probably only a very few minutes… If you can, please advise! Thank you.
