@@FrankWolenczak True, but she could buy a stick of gum for 35 cents and then be out of there quick. Meanwhile, the slurpee takes more time and effort to put together to then buy (and that time could've been put toward the issue at hand) and then it ends up being $1.06 at cheapest.

Maybe, but who knows the whole story. They do so serious editing and add lots drama in this show. His parents could have footed the bill for the place and let it be put in his name. Now his dad goes to work every day and is cutting loose one night and that's what they show us. Gotta have a narrative for a show like this.

At the restaurant I work at, our chefs change out the oil every single morning before we open... I have never in my life seen oil look like that, and am mortified that someone would drop food in those fryers and not even think that there is an issue.

Exactly.. I worked at McDonald’s and it was always spotless. We cleaned everything at night and in the morning they put in all new supplies. We had a great manager and it was really the cleanest place I’ve worked. These shows gross me out.. don’t understand why you can let it get that bad

@@raymondvilleneuve5752 We are a Sushi and 'Japanese' restaurant. If you don't change that oil every day the tempura batter becomes a nightmare to clean. Edit: We do about 4.5 million a year in sales. It's a pretty busy place. Terribly understaffed right now though. Been that way since 2020. Teenagers and college aged kids don't apply for jobs anymore to anywhere around this area. All restaurants are kinda doomed.

@@Dizzifying1 that makes sense. I worked in kitchens about 15 years ago. I've never worked anywhere that used tempura, didn't realize it wrecked a fryer so bad. However no that I think of it, I've never smelled a fryer in a sushi restaurant and that could be the reason. Now I know, thanks for responding.

Me and my brother had a bar and grill. We sold it after a successful 12 years to pursue a coffee house/ bistro model which is doing amazing. He ran the front of the house and I ran the kitchen. I would drain/strain the fryers, clean them, and then pump the oil back in daily. Usually every 3rd day I would fill them with new oil. Ideally, you would want to go fresh daily but I couldn’t stand to waste good oil. If you can’t see the bottom of your fryer because of the color of the oil you’re failing.

Facts. My dad would never. I saw my parents get kinda physical one time in my life. My dad was incredibly depressed for a while after his dad passed and he lost his job. He wanted to leave our cabin in the only vehicle we took up there and my mom wouldn’t give him the keys. That was a really hard time for him and I’m so grateful he was able to use counseling to get through it. My parents have been happily married for almost 34 years now.

John is the father all of us we wish we had. I know that I needed guidance like his and unfortunately, my father was extremely disconnected from the way my brother and I were raised. In a way we were taught to be afraid of him, which was not needed as I was constantly terrified. He I believe is an undiagnosed person with bipolar disorder.

OK, so, when you are working in a kitchen, do NOT use towels. They are bacteria magnets. Final clean down should be with disposable blue roll. That way, anything you wipe after spraying with disinfectant, will be clean. If you just use a towel, you are spreading germs over everything. It's basic sanitation training. Before you start, it should be a given, but people forget: tie your hair up, cap up, and grab a cover for your beard if you have a beard. No point working your backside off, cleaning, and leaving your hairs everywhere you've gone. The same applies for cooking: your hair in their food is just asking for a fine from the health inspector. What I was taught was this: first step, wash your hands, dry them and apply gloves. Some of the chemicals you might be using are harmful to skin. If the cleaning agent you are using is particularly strong, other gear might be needed, such as a mask or eye protection. If fumes may result, make sure you switch on the air filtration system. Secondly, select a checkered wipe cloth or scourer of the correct corresponding colour. Blue for sinks, green for tables and surfaces, yellow for coffee machine, purple for allergens etc. If you're not sure what is for which: ASK a colleague or your kitchen leader. If it is not a fresh cloth, you must clean it completely with soap and hot water before using it, then wring it out. Any visible dirt should be removed from the surfaces with either soapy water, cleaning cream, or another solvent depending on what you are cleaning, and then the excess moisture soaked up. Be sure to keep your cloth, sponge or scourer frequently rinsed out, under running water. Make sure that you have gotten into all the nooks, crannies and awkward places, especially important with nozzles, grills, hobs and so on. Once everything looks clean, and as dry as you can get it, move onto the next stage. Apply the disinfectant spray: there are different types for cutting boards, metallics etc. Be sure to use one which is suitable for the task: some should not be used on surfaces food will touch, others are specifically for ovens and so on. Using the wrong cleaner, in, say, your merry chef, could damage the metal, be absorbed into the oven itself, and can then be transferred to food. Some you just had to leave for 60 seconds, others require five minutes. When the time has passed, use disposable blue roll to remove the disinfectant. Ensure that all the disinfectant is removed. Check that the area looks clean. If it does not, do it again: slip shod sanitation and laziness is not acceptable. NEVER leave a cleaning product in or on a piece of equipment that is heated or chilled. You can seriously damage it by doing that. Everything you have used to clean that is not disposable should be washed after you are done in the right sink. If the cloth or scourer is visibly dirty and cannot be cleaned, bin it. Ensure that they are placed in the proper areas for their colours to dry. Make sure you also wipe down any bottles or containers you were handling during clean up too. Part of your job is to make sure that what you make or cook, and then serve, is of the highest standard. You cannot make good food in a dirty kitchen, it is irresponsible. The sanitary conditions of your kitchen and other places in the business must be kept to a much higher standard than one would expect, say, from a customer's home. They have come out and are paying you to make food, you owe them your full effort, they are paying your salary through their purchases. You have to clean as you go. If you don't, all sorts of nasty crap will start to build up. This is particularly true on areas that are heated, or use grease or cooking oils, such as a fryer. Spills of oils or fats are very dangerous, they make it slippery underfoot, dirt can stick to it, it attracts pests, AND it is a fire hazard. Cooking fats tend to build up in layers, so think of it this way: do you want to spend fiftern minutes cleaning a piece of equipment, or most of an hour having to chip or scrub away at dried on crud? Prevention is better than cure, and you get to go home earlier at the end of the day. The final clean down for close will be much faster. There are all sorts of useful little tips on the web for faster clean down. One of my favourites was for the steam wand of the hot drinks machine. You're supposed to wipe the nozzle with a damp cloth as soon as you are done using it, but it is easy to forget to do so when service is heavy and you have forty or so people wanting coffees. But because it gets very hot, the damn milk dries incredibly fast to a nasty gritty mess. You can find the poor newbies frustratedly trying to scrape it off when this happens. Wet a thick cloth with just water, and wrap it around the steam wand, leave it for a bit. It will soften the dried on crap enough for you to do the normal clean after a few minutes. As well, there are many contamination possibilities when working with raw food. Not just salmonella and so forth, but allergens. If you are not attentive, say you don't clean something used for sea food properly, you could cause someone to go into anaphylactic shock, and die in the worst case scenario. Nut allergies are just as bad, and trust me, once you've seen someone's throat swelling shut, you NEVER want to see it again. Milk, gluten, oats, and so many others, can do just the same thing, so never, ever take that lightly.

@@aniota1648 it means I time my orders and if my food is “off” I’ve made a couple trips to the kitchens, send my drink back if it’s made incorrectly, pay attention to how the staff interacts with each other as well as customers. For my 3 month old grandson, he loves to watch Bar Rescue, because when he hears John’s voice he looks right at the tv and says, “Hi.” I believe he’s so animated in his speeches, my little guy is spellbound.

@@Angela_GenX Jon Taffer acts that way because the bars contact the show and ask him to come help their business be better. You haven't become tafferized, you're probably just acting like a Karen. I've worked in a bars like this and it really sucks when you try your hardest, do everything you can to please a customer, but because the owners don't know what they're doing and maybe the kitchen sucks you have to deal with angry customers. Sometimes the only thing I could do to compensate a customer for shitty food or a long wait was to give them a free meal. What they didn't know was that I was actually giving them my shift meal, the only thing I had any power to do, so I wouldn't be eating dinner that day. I'm not saying you have to stay silent if you get bad service or nasty food but don't go out of your way to act like an asshole and critique or bully the staff because you watch too much t.v.

When I was 18 in the late 90s I worked at a restaurant. I had to learn how to do everything because several people had quit. And I have to do my job and their job. I learned to cook the meat/food and make salsa and do a tone of other work. The environment I worked in I always kept the kitchen spotless clean because the last thing I ever wanted to do is get someone sick. I think all teens should work in a kitchen at a restaurant at least once in a life just to know what it's like to have to hustle and bustle.

When I was growing up on the south side of Chicago you were lucky if the corner bar had cold ham and cheese sandwiches to go along with the packages of pretzels, potato chips, peanuts, and popcorn. Hot food? The bartenders would laugh at you.

@@tristyy404 , There are some problems in some states. In my State of Georgia a bar must prove each year that at least 50.000% of its revenue comes from non-alcoholic beverage sources. Thus every cola and grenadine, rooted beer, and gingered ale, etcetera is valued as contributing towards the 50.000%. So the bars sell any and every food item they can conjure up. Freezers full of microwaveable burritos, miniature pizzas, miniature hamburgers, corn dogs, waffle wrapped sausages. Also ice cream cups, ice cream bars, ice cream cones, and so on add to the pretzels, popcorn, peanuts, etcetera. Cans of chili and soup or microwavable bowls of the same. Some make triple decker ham club sandwiches with already cooked packaged microwavable bacon. The bread doesn't get toasted. The food services are desperate attempts to avoid missing the 50.000% requirement and then getting fined by the government or have your liquor license taken away. If it can be heated up in a microwave oven then you might find it at your local very barish bar. The big chains like Applebee's have little trouble because they make lots of money from the non-drinking lunch and dinner crowds. Office parties, children's birthday parties, etcetera. It's the independent bars that sometimes struggle to meet the 50.000% requirement.

I just couldn't imagine being like "yeah those bartenders I hired will probably mess up your drinks cuz I didn't hire anyone with training or train them myself" like honestly couldn't you just hire someone to train them if you have so little time you can't do it yourself. Also what could possibly be more important than making sure the drinks in your BAR are made right thats literally why people show up. Makes me so mad when owners blame their employees that don't have training like what are they supposed to do... they can't train themselves!! Hire people with training or figure out a way to train them, you can't just hire ppl who don't know what they're doing and them blame them for it.

I wonder if anyone else noticed that the bar towards the end of the run where Jon asked someone to pay for a drink with a 100 dollar bill got the wrong change back. Drink was 6.25 paid with the hundred and got 94.25 back as change.

Any bar/restaurant establishment should have either a rolodex drink recipe or a mixologist recipe book to refer too, not only does it give the proper ratio of alcohol but most will tell you what type of glass and garnishes to use. The one thing I look for in any establishment is the how often do bartenders wash their hands after touching money.
