For the one person who cares: Lean steaks are usually from old animals and the muscle is tough and dry because of the age, or Young animals who have atrophied because of a disability. Big juicy well marbled steaks are from healthy, well fed and strong animals slaughtered at appropriate age. Lean steaks by and large are old milk cows, most cattle in the USA is healthy and well fed on huge pieces of land, so very few lean cuts come from young animals. Bulgarian cows have much more fatty meat, not much marbling, but the beef is closer to veal, so as long as you avoid tendons in the cuts, it's still good, just a strange factoid about cows.
