Hi Mark. The pureed vegetable is called callalloo. It is made from the leaves of the taro plant (also called dasheen bush), okra and Scotch bonnet peppers - all stewed in coconut milk. Trinidad and Tobago's population is multi-ethnic, with groups of people who trace their origins to West Africa, India, China, Portugal, Syria, England and elsewhere, as well as the original Amerindian community. Our cuisine is a melting pot of influences from all of these groups. The meal that you had reflects this diversity. The callalloo is West African in origin and the curry comes from India.

And Trinidadian curry is my favourite curry in the world. The addition of all the green herbs (especially the blessed thistle or shadon beni) gives it a completely different dimension.

why because i don't want to spend 31 dollars on a pizza? a pizza should be no more than 10-15 dollars.. at most.its not like its a fancy restaurant . its just a takeaway pizza. no matter how good the taste i wouldn't pay that for a pizza unless its fine dining then it makes sence. you can find much cheaper pizza in japan and switzerland wich are already expensive countries. a decent pizza in naples italy is around 4-5 euros. thats 6 USD

There is a significant East Indian population in the Caribbean who were brought over by the British from India as laborers. Ditto Africans. V.S. Naipaul is a famous Trinidadian author with Indian roots. His book of short stories, 'Miguel Street,' is set in Trinidad right after WW II, and is a very interesting, fun read about Indian-Trinidadian culture of that time. In one of the stories, Naipaul muses about ingredients mysteriously crossing cultural barriers despite different racial groups keeping to themselves.

True, he seems to have the same facial expression to everything he eats. Hence, it appears that Mark loves all he tastes/eats😂.

No man, all food is good, unless it's badly prepared. Just like Mark, I have my preferences, but I find everything equally interesting. It just sounds ridiculous to me to like one thing and dislike the other. Frozen, artificial stuff can be really bad, but if you pluck a ripe fruit from a tree and don't like it, there's something wrong with you, not the other way around.

Well was that from a store or street vendor? Also I'm going to quote an excerpt from an article on the cost some street cart vendors pay the city just to have the privilege to sell from a certain spot. "Call it the half-million-dollar hot dog cart. Mohammad Mastafa of Astoria, Queens, has to sell almost that much in drinks and snacks annually to break even on the pushcart he owns at Fifth Avenue and East 62nd Street near the Central Park Zoo. He pays the city’s parks department $289,500 a year just for the right to operate his single cart there." www.nytimes.com/2013/09/05/nyregion/the-six-figure-price-tag-for-selling-a-two-dollar-hot-dog.html

All I see is a pizza bread , sauce , pepperoni , cheese and basil . No need for it to be $ 31 no matter how good you're making it.

When you use the best quality ingredients cost of goods goes up, and when you make one of best pizzas in New York and probably the world, you can charge 31 dollars.
