I have been cooking salmon head for years and only 2 different recipes ( salmon soup and grilled). I still have 1 head in the freezer and definitely will try this now .

In the eastern part of India and in Bangladesh, fish head with lentil( daal) soup is a great-tasting dish, enjoyed with rice. Fish head can be used in a cabbage and potato curry, enhancing the flavour. Adding garam masala and bit of ghee is a must.

If you have access to Costco, and are just after filets, they have wild caught red salmon for around $13. Look for flesh with no lacerations, discolouration, and a nice deep red. Also make sure there's no water running around in the bottom.
