You can add the left over salmon skin with the water/chicken stock/fish stock while it cooks to give it an extra fishy, savory flavor. Take it out right as it starts to fall apart. you're getting all the collagen proteins and omega-3 fats, which are very good for you.

Wow. I made this exact same recipe, albeit with a slightly differently technique, tonight for dinner and am eating it as I watch your video. I had never heard of Finnish soup and just searched on KZbin to see what other type of salmon soup recipes exist. What a coincidence! They are seasonal flavors that just make sense together, I guess.

Made this tonight. Used seafood stock as I couldn’t find fish stock anywhere and was kind of worried once I added the stock, but it turned out amazing. One of my favorites and something I never would have ever tried without STCG.

A thing to remember is you shouldn't cook the dill too much I think. I mean not over a lot of heat. It's a delicate herb with a delicate taste which will be ruined if cooked for too long. Herbs are different in this regard. Some you can - and SHOULD - cook for a long time. Dill is not one of them and you should maybe just parboil it and switch it off, stir and let it sit. Be careful with that stuff. -b

I would typically fry off the salmon in a lot of butter and a bit of lime or lemon-pepper, add it in last minute with the cream, let it get back to a boil and then take it off the heat. Dill goes in last when it's no longer boiling, For me a bit of rutabaga/swede and parsnip is also essential.

Made the soup but used lobster broth because the store didn’t have fish broth. Then we decided to used shrimp and lobster instead of salmon. Came out awesome.

In Finland you'd actually use whole corns of allspice instead of the ground pepper. We put it in all our soups and stews. My mom is infamous with allspice, you end up with 20+ corns decorating the rim or your plate when eating her soup. (because you obviously don't eat the corns)

Thank you for the recipe. I would love to try this recipe because I like to try leek in fish soup! I am originally from Russia and fish soup is much common than in the USA. The fish stock we can't make from any fish, some fish is not for stock at all!:) Salmon is great to make stock! To my taste, the best soup is a soup from osetra. Use a fish scale for stock and it gives no taste difference but gives more thickness.

Capital markets buy only salmon from fishers who get salmon from the nearby ocean or from those who caught the salmon at lapland and drove back to capital at same or next day. They wont buy salmon older than maximum 2 days from catching/killing.

Nah, there has to be more cars than saunas in Finland. Many people live in cities in small apartments that dont have saunas. But many of those people still have cars. Theres like 3.5 million cars in Finland wlile theres 5.5 million people in Finland. Some estimates say theres 3.5 million saunas in finland, but that just cant be correct. If you live in Finland, you just know. Not even half of the population has their own sauna.
