BEST SWEET POTATO CASSEROLE ❤

My family begs me to make this SWEET POTATO CASSEROLE every year, it will impress anyone who tries it. It is smooth and creamy with a crunchy crumble topping, I like to decorate the top with pecan halves in a beautiful design just to get away from tradition a little. The combination of vanilla, butter, cinnamon and eggs and milk make this casserole rich tasting and golden, then as if that wasn't enough, here comes the amazing crumble topping made with brown sugar, butter and flour with a beautiful design made out of pecan halves. This Sweet Potato Casserole can be enjoyed as a side dish or a dessert, either way is delicious and always a winner and made easy to be able to remove pecans if someone doesn't like them. This will always be highly requested in your home.
INGREDIENTS----------------
4 medium/large sweet potatoes (peeled and cubed)
2 eggs
3/4 C. granulated sugar
1 & 1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1 tsp salt (for boiling)
1/4 to 1/3 C. milk
1/2 C. butter (1 stick)
Butter to coat casserole dish
CRUMBLE TOPPING_______________
1/2 C. brown sugar
1/3 C. All purpose flour
3 Tbsp cold butter (small cubes)
Pecan halves to decorate (as needed)
BAKE 350°
40 minutes or till golden brown

My family makes sweet potato casserole using baked sweet potatoes peeled and cut into big chunks. Then a butter, brown sugar, and cinnamon syrup poured over (mostly butter), and then crumbled ginger snap cookies and pecans on top then bake.

We do the same, but not the gingersnaps and pecan. We top it with marshmallows the last few minutes in the oven till they brown. Almost forgot, we sometimes add crushed pineapple into mashed method. Yumm.

I made this Sweet Potato Casserole on Christmas and it turned out perfectly. It was delicious. I usually make sweet potatoes by mashing them after cooking with brown sugar and marshmallows and butter on top if desired. I like them but they have been replaced with this casserole. I’ve been making a similar dish for 40 years, but we prefer it to be more savory than sweet. Butter, eggs, small amount of brown sugar, cinnamon, ground cloves, ground allspice, garlic powder, onion powder and baking powder. The baking powder gives a nice rise and airy texture. Drizzle additional butter on top.

I'm 71 and love watching you cook and making your recipes especially the Mexican dishes. My sweet potato casserole is like yours and a family favorite at holidays. This Thanksgiving I'll take the time to decorate with pecan halves as it's such a beautiful presentation. Because of arthritis in hand I boil my sweet potatoes whole, cool and peel. Sometimes sweet potatoes will be stringy so I beat them a minute and the strings collect on the beaters, I then clean the beaters and continue on with recipe. I love sweet potatoes but really love yams. When I cook them, I mix half & half with cooked carrots. The orange color is brilliant & you only taste the yams, especially when you have added sugar & I use brown sugar for a richer flavor. I don't always add spices or sugar as I like the taste of the veggies. Butter is important tho & eggs add protein. Toasted nuts add special flavor. You have made sweet potato pie. No wonder your family loves it. 😄 Some people add marshmallows. Those are the real sugar lovers.

Hi Rachel, I love your "cooking spirit". My family are not big fans of "whipped sweet potatoes"soooooo we tweaked the recipe a lil bit and converted it to just sliced potatoes(with all same ingrediants plus a lil nutmeg) same delicious topping( that hid the sliced potatoes) and it turned out delicious! Especially loved the creative way you decorated with pecans. We added a couple of maraschino cherries for color. Thanks so much for this recipe(tweaked a lil). It was so yummy.
